  • 1/2 cup KRAFT Zesty CATALINA Dressing divided
  • 1 large onion sliced
  • 2 tsp chili powder
  • 2 lb boneless beef short ribs
  • 24 oz ORE-IDA STEAM N' MASH Cut Russet Potatoes 1 package
  • 2 tbsp chopped italian parsley

Instructions
  1. MIx barbecue sauce and 1/4 cup dressing until blended.
  2. Heat remaining dressing in electric pressure cooker using SAUTÉ setting on medium heat. Add onions and chili powder; cook and stir 2 min. Add meat and barbecue sauce mixture. Close and lock lid. Turn Pressure Release Valve to Sealing position.
  3. Cook 40 min using HIGH PRESSURE COOK setting. When timer goes off, use Quick Pressure Release to carefully release pressure. Slowly remove lid. Use tongs to remove meat from cooker; cool slightly.
  4. Meanwhile, skim and discard fat from surface of barbecue sauce mixture in cooker; cook 10 min. using SAUTÉ setting on high heat. While sauce is cooking, cook potatoes as directed on package.
  5. Spoon meat over the potatoes; drizzle with 1/2 cup of the sauce. Sprinkle with parsley. Serve any remaining sauce on the side.

How to Check for Tenderness
Larger pieces of meat may require more time. Short ribs should cooked until tender - a fork should be able to be easily inserted into the meaty portions of the ribs.

    When I made this, I kept getting a “burn” notice from the instant pot. I opened and stirred… and it did it again. I ended up taking the rib meat out and inserting the little tray. Then it didn’t give me the burn notice anymore. Anyone else have this problem? Not sure if I did something wrong or the tray should be used… new to instant pots!

    Amazing flavor! So easy, so yummy!! I added a half cup of water to avoid the “burn” warning. Reduced the sauce a bit longer after. Turned out great!

    Got burn warnings several times as the sweet sauce burned on the bottom of the pot. I took out the food, cleaned the pot, put in the steamer rack and put water in the bottom. That allowed it to finish without warnings.

    What a hit! Made this tonight and my family and friends raved. I did add 1/2 cup water and reduced the chili powder in half to suit my families’ taste buds.
