Ingredients
  • 4cups Granny Smith applediced, about 1 pound
  • 2cups steel cut oatsgluten-free, such as Bob’s Red Mill
  • 7cups Water
  • 1/2cup honeyor liquid sweetener of choice (maple syrup or agave to make it vegan), adjust to preference of sweetness
  • 1/2teaspoon salt
  • 1/2teaspoon allspiceground
  • 13.6ounce coconut milklight, 1 can
  • cashewstoasted, optional
  • Granny Smith applediced for topping, optional
Instructions
  1. Coat the inner pot of the Instant Pot with oil. Combine apple and next 6 ingredients (oats through coconut milk) in inner pot.
  2. Close and lock the lid of the Instant Pot. Turn the steam release handle to “Venting” position. Press [Slow Cook], and use [Adjust] to select “Less” mode. Press [-] or [+] to choose 6 hours cook time.
  3. Stir well before serving. Garnish with toasted cashews and additional diced apple, if desired. Enjoy!
