  • 2 cups steel cut oats gluten-free, such as Bob’s Red Mill
  • 7 cups Water
  • 1/2 cup honey or liquid sweetener of choice (maple syrup or agave to make it vegan), adjust to preference of sweetness
  • 1/2 teaspoon salt
  • 1/2 teaspoon allspice ground
  • 13.6 ounce coconut milk light, 1 can
  • cashews toasted, optional
  • Granny Smith apple diced for topping, optional

Instructions
  1. Coat the inner pot of the Instant Pot with oil. Combine apple and next 6 ingredients (oats through coconut milk) in inner pot.
  2. Close and lock the lid of the Instant Pot. Turn the steam release handle to “Venting” position. Press [Slow Cook], and use [Adjust] to select “Less” mode. Press [-] or [+] to choose 6 hours cook time.
  3. Stir well before serving. Garnish with toasted cashews and additional diced apple, if desired. Enjoy!

    I only used 2 apples (honey crisp), 1 cup steel cut oats and 3 cups of water. I added cinnamon and a splash of vanilla as well as maple syrup. Excellent! My kids loved it!

    Not a fan. Made this with 2 apples, 1 cup oats, 1/3 cup honey, 3 cups water, 1 cup coconut milk. Thought apples would become pureed but they stayed in firm pieces yet they lost their tast completely.
