6-8ouncesNew York strip steaks,2 steaks, 1 1/2 inches thick
2 tspclarified butter
flaky sea salt and black pepper for serving
Fill a large container with approximately 25 cups of water. Attach sous vide immersion circulator to the container, and set the temperature to 130 °F.
Season steaks on both sides with kosher salt and black pepper, then place them in separate plastic bags. When the water has heated to 130 °F, place steaks in plastic container, and cook for 1 hour and 40 minutes. Remove from water and the bags.
Heat a cast-iron skillet over medium high heat. When the skillet is hot. add butter. Once the butter begins to bubble, add your steaks to the pan and sear on each side for 2 minutes. This will cook your steak to medium rare, 135 °F.
Let sit for 5 minutes. Sprinkle with flaky sea salt and freshly ground black pepper to taste.
