Ingredients
  • 12-15oz artichoke heartsdrained 1 can or 1 jar
  • 1small yellow onionfinely diced
  • 1/2cup chicken broth
  • 3cloves garlicminced
  • 10oz frozen spinach 1 box
  • 8oz cream cheese
  • 1/2cup sour cream
  • 1/2cup mayonnaise
  • 14oz shredded parmesan
  • 8oz shredded mozzarella or monterey jack
  • 1tbsp hot sauceor to taste (optional)
Instructions
  1. Mix together drained artichoke hearts, onion, broth and garlic in the Instant Pot.
  2. Top with frozen spinach, cream cheese, sour cream and mayonnaise. Do not stir.
  3. Secure the lid, making sure the vent is closed.
  4. Using the display panel select the MANUAL or PRESSURE COOK function*. Use the +/- keys and program the Instant Pot for 4 minutes.
  5. When the time is up, quick-release the remaining pressure.
  6. Stir in cheese and (optional hot sauce). Serve with tortilla chips or sliced baguette.
