  • 1 tablespoon cooking oil
  • 1 large onion diced
  • 1-2 jalapeños diced
  • 1 pound ground chicken
  • 1 pound pasta we used pasta shells
  • 2 tablespoon taco seasoning mix love trader joe's
  • 2 and 1/2 cups salsa
  • 4 cups low sodium chicken broth or water or half and half
  • 1/2 cup cilantro chopped
  • 1/2 cup Cheddar cheese grated
  • 1/2 cup pepper jack cheese grated

Instructions
  1. Turn Instant Pot to saute(more) mode. Once the 'hot' sign displays, add oil. Add onions and jalapeños. Sauté for 2-3 mins.
  2. Add ground chicken. Break chicken which the spatula. Add taco seasoning and mix everything together.
  3. Add salsa, 4 cups chicken broth and pasta. Mix well and with the spatula push the pasta under the liquids. Make sure most of the pasta is under liquids for the pasta to cook well.
  4. Close Instant Pot with pressure valve to sealing. Cook on Manual(Hi) for 3 mins. Note- Cook time for the pasta shells we used was 7 minutes.
  5. Quick release and open Instant Pot. Stir in the cheeses and garnish with cilantro.

    Was yummy, added a good dolop of sour cream on top of each bowl. We used rontini as what was in pantry , same cooking time and pasta was perfect.

    Made it without japs, added a little more water/broth and cooked pasta 2 min longer but it came out great! Make sure you alternate between saute and keep warm while adding ingredients to keep pot from getting too hot.

    I used shells, medium size, set IP for 3 min but they were not cooked yet so I turned the IP back on and set it for another two min. Cook time on bag was a range of 8-10 min, IP time 5 min. The teens and hubby all gave it thumbs up.

    Good dish but every time I make it i get the Burnt error. I deglaze the bottom with a white wine to make sure it doesnt have stuff on it before i start the presure cook.

    Changed up the ingredients a but to taste but cook time with shells was bang on. Will be doing this one again forsure.

    This was good, we kidified it by omitting the jalepenos and using mild salsa- it probably would have been better otherwise but toddlers!! We used penne because it is what was on hand, i cooked 5 minutes and it was perfect. It a liquidy at first so i cooked off some liquid with the saute feature. Next time will use smaller guage pasta.
