*A variety of soaked beans will work in this recipe including: adzuki, black, cannellini, great northern, lima, navy, pinto, red kidney, or not-soaked lentils.
**The reason to put the beans directly in the Instant Pot inner pot and the quinoa in the bowl (instead of vice versa) is so that you can take the quinoa out and continue to cook the beans if necessary.
***Quinoa cooked directly in Instant Pot inner pot would only take 5 minutes, with a natural pressure release. Grains cooked with the Pot in Pot method take longer, so the time in this recipe reflects that. The water ratio is also lower than if made directly in inner pot. ****Cooking Pot-in-Pot is not an exact science. We have done extensive recipe testing and found that this method works best for us. You may find that you need to slightly adjust water ratios and/or times to better suit the type of quinoa you are using, your elevation, the type of inner pot you are using, etc.

Hi Amanda. I’m just starting with Instant Pot and would really love to make this recipe but two things concerned me: trivet and stainless steel flat-bottomed bowl. Are they authorised IP accessories or just the kind of equipment one should have in the kitchen??? It boggles me.
Hi, the trivet comes with the cooker so you can definitely use it as well as a stainless steel flat-bottomed bowl.
Definitely NOT keto! Why do so many recipes state keto on this app when they arent?

Nope not keto. A 1/2 cup of beans is 13 carbs. Thats 65% of my carbohydrate intake for the day i dont think so.
