Instructions
  1. Put the chicken in a heatproof bowl. Add the soy sauce, sesame oil, ginger, garlic, Truvia, and vinegar. Stir to coat the chicken. Cover the bowl with aluminum foil or a silicone lid.
  2. Pour 2 cups of water into the inner cooking pot of the Instant Pot®, then place a trivet in the pot. Place the bowl on the trivet.
  3. Lock the lid into place. Select Manual or Pressure Cook and adjust the pressure to High. Cook for 10 minutes. When the cooking is complete, let the pressure release naturally for 10 minutes, then quick-release any remaining pressure. Unlock the lid.
  4. Remove the chicken and shred it, then mix it back in with the liquid in the bowl.
  5. Serve as is, over zoodles, or in a salad, as shown on the opposite page, with crushed peanuts and Easy Asian Peanut Dressing

    Mine was undercooked. I took off the foil and added 8 more minutes to it. I didnt shread the chicken but cut it in slices before cooking. I added a single grated garlic to it. Tasted good, but required more cooking. I used a stainless bowl do ther was heat transfer…

    I love this recipe. Super easy, super fast and super delicious! Perfect weeknight meal… I cook broccoli in the top of the double stacked pans while the chicken cooks in the bottom.

    the recipe ingredient list does not contain any garlic yet in the instructions it does. did it get lost some where and if so how much garlic?

    I used 2 pieces of garlic, minced after seeing it listed in the directions even though, as another commenter noted, it was not in the list of ingredients. Chicken was still raw in parts after 8 minutes. Pressure cooked an additional 4 minutes without the foil and it was fine. Flavorful dish. I will make it again.
