The flavor is packed into the broth, meat, and veggies that give it that classic chili taste without the carbs. This version packs a subtle punch of heat after the initial burst of flavor. Top with your favorite chili add-ins. For a crunch, try crushed pork rinds on top!

Instructions
  1. Press the Sauté button and cook bacon. Remove bacon, crumble, and set aside. In bacon grease, brown beef and pork until fully cooked. Add green pepper and onion to Instant Potâ and allow to soften for 1 minute.
  2. Press the Cancel button and add remaining ingredients except xanthan gum to pot. Click lid closed. Press the Soup button and adjust time for 30 minutes. Allow a 10-minute natural release and then quick-release the remaining pressure. Stir in cooked bacon. Serve warm with favorite chili toppings.
  3. For thicker chili, remove lid when timer goes off and press the Sauté button. Add xanthan gum and reduce chili, stirring frequently, until desired thickness. Top with additional diced onions or other toppings.

    It was quick and easy, but came out too watery. Next time I’ll only use 1 cup of beef broth. Also, I added 3 cloves of garlic.

    This is a very good recipe. Hearty and satisfying. I added fresh button mushrooms and garlic with the onions and green peppers, and served it with chopped green onions, grated cheese and sour cream. Delicious, and you don’t miss the beans.

    I didn’t add bacon and used chili pepper instead of cayenne pepper. Came out delicious! Will probably make it again.
