  • 1 tsp kosher salt
  • 1/8 tsp pepper
  • 3 tbsp butter unsalted
  • 4 oz good quality pecorino cheese finely grated, or parmesan
  • Additional grated pecorino kosher salt and freshly ground pepper to finish

Instructions
  1. Using the display panel select the SAUTE function.
  2. Add polenta, warmed water, salt and pepper in the Instant Pot and whisk to combine.
  3. Bring to a simmer, then whisk again.
  4. Turn the pot off by selecting CANCEL, then secure the lid, making sure the vent is closed.
  5. Using the display panel select the MANUAL or PRESSURE COOK function*. Use the +/- buttons and program the Instant Pot for 0 minutes.
  6. When the time is up, let the pressure release naturally for 10 minutes, then quick-release the remaining pressure.
  7. Whisk the polenta until well-combined and creamy.
  8. Add butter and stir to combine. Add pecorino a little at a time, whisking until melted. Adjust seasonings as needed.
  9. Serve--a wide, shallow bowl is traditional--topped with additional pecorino, salt and a generous grind of pepper.

    That is the correct cooking time. The Instant Pot Pressure Cooker will still cook while under pressure.

    I followed the instructions. Got the BURN warning, but it wasn’t burned, however some was stuck to the bottom.
    At any rate, it came out fine but next time i make polenta i may do it in the oven. It’s just as easy, and there is a recipe on the polenta bag. Too scary getting the BURN warning!

    The burn warning shouldn’t be scary. It is designed to prevent food from burning to save your meal. It can be triggered when it starts to sense food sticking and turns down the heat to prevent burning.

    To fix: Depressurize,inspect the contents and bottom of inner pot, add water/ thin liquid and scrap stuck on its and pressure cook again with the cooking time reduced a bit to make up for the cooking that happens while preheating.
