Pesto Chicken

Pesto is a wonderful alternative to white or red sauces and definitely doesn’t lack in flavor. You can make your own pesto or buy store-bought versions, which are usually low in carbs. If you’ve never liked ricotta, you may want to try seasoning it by sprinkling herbs or salt directly on the ricotta to bring out the most flavor. The creamy element it brings to the dish is a must! Serve atop zoodles with a sprinkle of parsley.

Instructions
  1. Sprinkle seasonings on chicken breasts. Press the Sauté button and add coconut oil to Instant Pot. Sauté chicken for 3–5 minutes or until golden brown.
  2. Remove chicken and place into 7 cup glass bowl. Pour water into pot and use wooden spoon or rubber spatula to make sure no seasoning is stuck to bottom of pot.
  3. Place spoonful of ricotta onto chicken pieces. Pour pesto over chicken. Sprinkle mozzarella over chicken. Cover with foil. Place steam rack into Instant Pot and carefully put bowl on top. Click lid closed. Press the Manual button and adjust time for 20 minutes. When timer beeps, allow a natural release. Serve with chopped parsley if desired.

    Easy and yummy! I did not know what to make for dinner tonight until i was in the grocery section of the store. With just a few ingredients, I was able to pull off a great dinner.

    This is One of the best chicken dishes we have ever eaten at our house. The chicken was moist and the sauce was delicious. I forgot to purchase the ricotta cheese, and I used small curd cottage cheese instead. The product was equally good in my opinion. I served it with zucchini noodles as the picture shows, but sauteed them in garlic EVOO for 2 minutes right before serving!

    Good flavor, but the chicken was over cooked. The natural release took an additional 18 minutes, so overall the total time turn into almost 50 mins! Way too long for a simple dish.

    This was my first recipe with my Instant Pot. It turned out great! Very tasty and moist. Served it with a salad.

    My first meal with my new pot. I was surprised that I needed a glass bowl. I found an old souffle dish that worked. I will make this again.

    Loved it and relatively easy. I would go easy on the mozzarella as it tends to form a thick layer. But very delicious, especially over the zucchini. I do wish they would add zucchini instructions. I googled it and it turned out fine, but it would be helpful.

    So good! Highly reccomend. I didnt have a bowl to fit in the pot so i make shifted a bowl from foil and it worked out great.

    Delicious!! Like other reviewers, i didnt have a bowl small enough, so i used a foil packet. Worked great.

    This is a tasty recipe but could be easily made in larger quantities on the stovetop. I did find a bowl that would work and found the chicken to be good, but slightly over done

    Very yummy but for some reason, despite having foil over my glass bowl the entire bowl filled with water/liquid to almost the very top of the bowl. And they were fresh breasts so no idea where that much liquid came from as the bottom of the pot still had about a cup of water left. Any ideas?

    Im a newbie to instant pot
    Im confused. After step 2; do I take that liquid/juice & add it to the bowl of chicken? Or does that juice stay in the stainless steel pot?
    And how long do i cook chicken, at what level?

    FYI the “manual” button is now the Pressure Cook button.

    This was good! My husband enjoyed it. I would maybe reduce the 20 min timer to 15 min or so next time, it was a little dry.
