Pasta Caprese
Easy one pot pasta caprese with tomatoes, basil, fresh mozzarella and a drizzle of balsamic vinegar

  • 2 1/2cups mezze penne
  • 1tablespoon extra-virgin olive oil
  • 15ounce tomato sauce1 can
  • 6 garlic clovesminced
  • 1 onionthinly sliced
  • 1cup grape tomatoeshalved
  • 4handfuls basil leaves
  • 1/4cup balsamic vinegar
  • 1cup mozzarella ballsfresh
  • Parmesan cheesegrated (optional)
  • 1teaspoon salt
  • 1teaspoon red peppercrushed (optional)
  • 1cup Water
  1. Set Instant Pot to Sauté mode. Once the Instant Pot displays ‘Hot’, add oil, onion, garlic and crushed red pepper. Sauté for one minute.
  2. Add grape tomatoes, pasta, pasta sauce, half of the basil leaves, salt and 1 cup of water . Stir well.
  3. Set Instant Pot to Manual at high pressure for 4 minutes with pressure valve set to sealing.
  4. Once time is up, Quick Release. Open Instant Pot and stir once again.
  5. Add fresh mozzarella cheese and balsamic vinegar.
  6. Serve hot garnished with more chopped basil and shredded parmesan. Enjoy!
