  • 2 1/2 cups mezze penne
  • 1 tablespoon extra-virgin olive oil
  • 15 ounce tomato sauce 1 can
  • 6 garlic cloves minced
  • 1 onion thinly sliced
  • 1 cup grape tomatoes halved
  • 4 handfuls basil leaves
  • 1/4 cup balsamic vinegar
  • 1 cup mozzarella balls fresh
  • Parmesan cheese grated (optional)
  • 1 teaspoon salt
  • 1 teaspoon red pepper crushed (optional)
  • 1 cup Water

Instructions
  1. Set Instant Pot to Sauté mode. Once the Instant Pot displays 'Hot', add oil, onion, garlic and crushed red pepper. Sauté for one minute.
  2. Add grape tomatoes, pasta, pasta sauce, half of the basil leaves, salt and 1 cup of water . Stir well.
  3. Set Instant Pot to Manual at high pressure for 4 minutes with pressure valve set to sealing.
  4. Once time is up, Quick Release. Open Instant Pot and stir once again.
  5. Add fresh mozzarella cheese and balsamic vinegar.
  6. Serve hot garnished with more chopped basil and shredded parmesan. Enjoy!

    This recipe was super easy and good, but if i make it again i wouldnt add nearly as much balsamic vinegar as indicated. The sauce was very dark, too acidic. Also would have saved the grape tomatoes to add at then end. Although the picture shows the tomatoes in the final dish, the pressure obliterated them to the point they werent identifiable.

    Halved the balsamic. Next time i’ll halve the red pepper too. Flavor very good but it’s pretty spicy as is. Maybe a touch more water as well to prevent burning.

    Yum. Flavors are amazing. Used regular mozzarella because I had it on hand. And reduced the balsamic vinegar in half. Also I chopped the tomatoes the night before with some basil and garlic and added them at the end of cooking.

    This was amazing! After reading the comments i cut the balsamic to 1/8 cup and next time I will cut it back a little more. I waited to add the tomatoes and did not add red crushed peppers.

    So easy and tasty. Next time I will add 1/8 cup of the balsamic vinegar as others have suggested. I also used sun dried tomatoes instead of grape tomatoes.

    It was great. I used less vinegar than the recommended amount. My pasta overcooked because I let it sit after being done. It must be served as soon as it is done.

    The ingredients list includes tomato sauce, but the instructions say to add pasta sauce. Those are different things. I used tomato sauce but did add some sugar and garlic salt at the end. Helped the flavor and my kids loved it.

    Halved the balsamic, and added the tomatoes at the end after cooking. Next time I’ll reduce the red pepper as the full teaspoon was SPICY. But the flavor was fantastic and I’ll definitely make it again.
