  • 1/2 cup celery diced

  • 2 cloves garlic diced
  • 1 medium onion diced
  • 3 cups cabbage shredded
  • 6 cups stock (beef, chicken or veggie)
  • 1 bay leaf
  • 1 tablespoon salt
  • 1/2 tablespoon thyme
  • 1/4 cup dill fresh, chopped
  • 1/2 cup coconut yogurt plain, or sour cream, optional

Instructions
  1. Place washed beets in a steamer in the Instant Pot with 1 cup of water.
  2. Steam for 7 minutes, quick release, and drop into an ice bath, the skins will slip right off. Dice.
  3. Put the beets, carrots, celery, garlic, onions, cabbage, bay leaf, stock, salt and thyme in the Instant Pot.
  4. Press the "Soup" setting on the Instant Pot, adjusting the time to 45 minutes.
  5. When time is up, allow a natural pressure release to prevent soup from splattering.
  6. Spoon into bowls adding a dollop of dairy free coconut yogurt or sour cream and garnishing with fresh dill. Enjoy!

    Excellent recipe! I lived in Ukraine for a year and this is the second best borscht I’ve had, second only to one of the many I had while living there. Recipe is easy to follow. The prep work of dicing all of the veggies is the most time consuming, but well worth it for the final product!

    Pretty watery and bland if you follow the recipe. I added more salt, way more dill and about 5 pieces of chopped up cooked bacon, and boiled it to reduce it. Turned out way better.

    I am farily new to using this device. But here’s my question: why doesn’t this recipe – and all the others here – specify the minimum size of Instant Pot required for the full recipe? Seems to me that since there are so many sizes of pot that this would be a no brainer.

    The recipes are designed for the 6 quart Instant Pots as they are the most popular size. 3 Quarts typically need to be reduced in half. 8 quarts can make 6 quart recipes without adjustment but may need to increase the liquid amount used if under 1.5 cups.
