  • 1 cup condensed milk add more for a sweeter taste
  • 13.5 ounces coconut milk full fat, divided, 1 can
  • 2/3 cup pineapple crushed, in juice
  • 1 tablespoon cinnamon

Instructions
  1. Combine water and rice in the Instant Pot. Cook at low pressure for 12 minutes (use rice button or use manual setting and adjust to low pressure).
  2. When time is up, quickly release pressure and add the condensed milk, half of the coconut milk, cinnamon and the can of pineapple with it's juice. Mix well and taste.
  3. Let the pudding cool for a bit and absorb all the liquid, swelling and thickening as it does so.
  4. Use the remaining half a can of coconut milk to thin the pudding to your taste after it has cooled.
  5. Serve and enjoy!

    I followed the directions and rice was a bit uncooked, maybe it needed 1-2 more minutes of cooking.
