  • 1 medium onion diced

  • 2-3 cloves garlic minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp fennel
  • 2 tsp sugar optional to cut tartness in tomato sauce
  • 28 ounces crushed tomatoes 1 can
  • 28 ounces water or chicken broth

Instructions
  1. Press Sauté to turn Instant Pot on and begin heating it up.
  2. If meat is lean, drizzle olive oil in bottom of heating pot. Brown italian sausage (or other ground meat, if using) in pot.
  3. To make the spaghetti sauce, add basil, oregano, and fennel to browning meat.
  4. Stir in onions and bell peppers, and saute for 2-3 minutes. Add garlic and stir in for 1 minute.
  5. Pour in crushed tomatoes.
  6. Add 28 ounces with fresh water or chicken broth and pour into IP (Instant Pot) over the sauce and meat.
  7. Stir this all together, and try to push as much pasta down into the sauce as possible.
  8. Place lid on Instant Pot and lock it in place.
  9. Check to make sure valve is on Sealing.
  10. Press to turn machine off from sautéing meat.
  11. Press Manual or Pressure Cook and then <+> or <-> to adjust time to HALF of lowest minutes of cooking time indicated on the box of pasta.
  12. Wait 10 seconds. Pot will beep to let you know it is starting to heat up. It should take approximately 12-15 minutes to come to pressure. The number of minutes that were entered will appear on the screen and begin to count down to zero.
  13. Carefully, keeping face and hands away from the valve, move it to Venting. This is a Quick Release. Should food begin to spray out, simply close the valve and wait a couple of minutes.
  14. After it is cooked, stir well and taste test. Be careful! It is extremely hot immediately after you release the pot. If you find it tastes too tart, sprinkle in 1-2 teaspoons of sugar to cut the acidity of the tomatoes.
Recipe Notes

You can use jarred spaghetti sauce, and pour sauce in and add slightly less than 1 1/2 jars of water. This recipe is based on a total of about 56 ounces of liquid, and sauce jars vary in size.
Note that jarred spaghetti sauce often contains sugar already.

Variations

  • Cajun Jambalaya Pasta: Use sliced smoked or andouille sausage instead of Italian Sausage. Add diced onions, bell pepper, and celery, garlic, thyme, and bay leaf. Crushed or diced tomatoes instead of sauce. Use chicken broth instead of water. Add red pepper flakes or sauce to taste.
  • Florentine Pasta: Add frozen chopped spinach and add cooked, drained beans (garbanzo, kidney, or cannellini).
    Gluten-free pasta works great.
  • Low-carb/Whole food version: Use cooked Spaghetti Squash as the pasta. Put in and stir as directed above. Set on Manual, high pressure for 2 minutes, and Quick Release.

      My kids will not eat onions or peppers. They ate 3 bowls of this and loved it. Super easy and very tasty

      I used a jar of spaghetti sauce with 1, 1/3 jars of water. This was way too watery. I had to cook another 8oz of pasta on the stovetop to add to this dish to soak up the liquid. Other than that, it was tasty. Next time I would add just 3/4 jar of liquid.

      Love this recipe! Added mushrooms in with the onion, bell pepper, and garlic. Sauteed them for a few minutes then added meat. Added salt and pepper here too. Used a jar of spaghetti sauce and 3 1/2 C. Broth. Topped off with grated parmesan and ate way too much! Very quick and yummy

      This was the first dish i made with my Instant Pot and it was super easy. A great recipe and delish! Would definitely make this again. My boyfriend loved it.

      Unfortunately, after sauteeing everything just fine and transitioning to pressure cooking, I got the burn notice. I tried stopping and adding more liquid , beyond all that was called for in recipe and got burn notice a second time. By this time, the food was mostly cooked, so I took it out of Pot and finished on stove top. The end result was good, though.

      I made this in my Instant Pot Mini. Used one 14 oz can of chicken broth vs 28 oz. Also used 1 can crushed tomatoes, and 1 can fire roasted tomatoes. Cooked sauce by itself for 10 minutes, then added pasta (rigatoni) for 6 minutes. I was right at max fill level, but it turned out great!

      It causd a burn error, I thought the instant pot malfunctioned, and returned it for exchange. It happened with the new one, so, I am not making this again.

      It was good, but a bit bland. It definitely needs salt added. Perhaps if I used chicken broth it would have been okay. Was concerned it might be too watery, but it absorbed quickly when it sat a few minutes. Topped it with mozzarella and parmesan.

      I used italian seasoning instead of fennel, basil, oregano separately. I used chicken broth and still had to add salt and pepper. No sugar. Topped with shaved parmesan! Wonderful!!

      Pasta came out undone and stuck together. Had to seprated pasta and cook 6min more. Everything is gummy now.

      This recipe worked great! I only had 12 ounces of gluten free pasta, so reduced the liquid proportionally. It was nice to have to liquid total so I could make the adjustment accurately. Also, I added in some cream before serving to appease kid palates that like Hamburger Helper type dishes.

      I used sweet peppers instead of green peppers and 1 can tomato sauce 1 can diced tomato. Turned out super yummy! Whole family agreed!

      I made it with a 24oz jar of pasta sauce but had to add 2 full jars of water instead of 1 1/2 .. Was very good, will make again
