Middle Eastern Millet Pilaf with Cinnamon, Carrots and Onion

Ingredients
  • 1tablespoon oil
  • 1cup onionchopped
  • 2cloves garlicminced
  • 1stick cinnamon
  • 1cup carrotsroughly chopped
  • 1cup millet
  • 1 3/4cups Wateror vegetable broth
  • saltto taste
  • pepperto taste
  • Italian parsleychopped
Instructions
  1. Heat the oil in the Instant Pot on the Saute function. Add the onion and sauté for 1 minute.
  2. Add the garlic, cinnamon stick and carrots and sauté for 30 seconds. Add the millet and stir to coat with oil. Add the water or broth and stir.
  3. Lock on the lid and set the Instant Pot to cook on Manual at High pressure for 10 minutes.
  4. When cooking time is up, allor for pressure to release naturally. Remove the lid, tilting it away from you.
  5. Remove the cinnamon stick. Fluff while adding salt, pepper and parsley to taste. Enjoy!
