Very tasty and filling!
This was a full bodied and flavorful soup that is low calorie as well. Used a slice of bacon in lieu if olive oil and Pancetta. The meatballs were very good and baking them made a big difference. Did not use flax, used seasoned breadcrumbs. Will make this again.
1) Add one-half pound Italian sausage meat to the pound of ground beef for the meat balls.
2) Use bread crumbs in lieu of flax for bread crumbs.
3) Add 1/4 cup of Red Wine to other broth ingredients.
4) Chop carrots into smaller bites prior to sautéeing.
5) Add 2 cups par-boiled pasta to cook Soup and let warm until just done with cover on.
6) Stir in chopped Italian parsley just before serving.
> Otherwise follow standard directions.
Does any one know how much water should be added?

Very good recipe. I used bread crumbs instead of flaxseed but otherwise followed the recipe.
I plan to add a little basil next time and a few jalapenos for some heat. But that’s to my own taste. The recipe is tastey as is. I recommend letting it sit for a night before eating as the flavors come together better.
I made this and used costco meatballs. Hubby lived it.
This was amazing! I found 1lb of uncooked premade meatballs in the meat section. This saved a bunch of money and time since I’m in student housing and don’t have much room for storage. The veggies were very mooshy at the end so be careful not to sautee them too long.
I added a teaspoon of tomato paste instead of the tomato sauce. I also used diced tomatoes with chiles which gave a little spice.
Delicious even without the pancetta/ bacon
Prep time would be 15 minutes with premade meatballs
But is 30 minutes at least if you make the meatballs
Made again recently and added a can of canellini beans after cooking and taking the lid off. Just let them sit in the still hot soup for about 5 minutes to heat up and you’re good. Butterbeans work too.
