Instructions
  1. Wash, peel and slice the carrots thickly on the diagonal.
  2. Put the carrots, raisins, and water in the Instant Pot. Close the lid and set the valve to pressure cooking position.
  3. Cook for 4 minutes on Manual at pressure. When time is up, open the Instant Pot by quick releasing pressure through the valve.
  4. Strain the carrots. While the carrots are straining, in the still-warm pressure melt the butter and maple syrup.
  5. Mix well, tumble in the strained carrots and raisins and delicately coat with the butter and maple sauce.
  6. Serve with freshly cracked pepper. Enjoy!

    I used baby carrots and cooked for 3 minutes. I didn’t used raisins… None on hand. I sprinkled a little kosher salt when i plated. My 10 year old son loved them. I will definitely make again.
