  • 1 tablespoon oil
  • 1 cup onion chopped
  • 1 tablespoon garlic minced
  • 1 pound ground beef
  • 1 cup Fire Roasted Tomatoes
  • 1 tablespoon chipotle pepper chopped
  • 2 Corn tortillas
  • 1/2 cup Water
Spice Mix
  • 1 tablespoon chile powder
  • 2 teaspoons ground cumin
  • 2 teaspoons salt
  • 1 teaspoon dried oregano

  • 1/2 cup Water

Instructions
  1. Use the Sauté function to heat up the Instant Pot. When display reads "hot" add the oil, and then add chopped onions and minced garlic.
  2. Stir for 30 seconds and then add ground beef. Break up the ground beef and allow it to brown slightly.
  3. Meanwhile, blend together the canned tomatoes and the corn tortillas until relatively smooth.
  4. Mix the various spices in a small bowl and once the ground beef is somewhat brown (but not fully cooked), add the powdered spices and allow the spices to bloom for 30 seconds.
  5. Add in the blended corn tortillas and tomatoes and use the 1/2 cup water to wash out the blender and pour that into the pot.
  6. Close the Instant Pot and cook at high pressure for 10 minutes. When time is up, allow for natural pressure release for 10 minutes and then release remaining pressure.
  7. Mix well, top with cheese if desired and serve. Enjoy!

    I made this last night. The pot never pressurized and eventually started counting down the 10 minutes. When it was done, I knew everything was cooked even though it never came to pressure so we ate it, and it was really good! Any ideas what was wrong? I followed the directions exactly. Is it too thick to come to pressure?

    Good flavor. My family does not like spicy so I left out the Chipotle peppers and it was perfect. I recommend using low-fat ground beef. I used 15% and without draining off the fat it made the chili a bit greasy. My instapot is new to me, but once I put it on pressure cook for the 10 minutes it started to burn before the time was up. Not sure there’s much advantage to using the instapot over a stock pot on the stove for this recipe.

    Super easy and delicious. The blended tortillas make it that much more delicious. I would recommend doubling the recipe if your significant other is a big eater 😉

    First time making this chili. Blending the tomato and corn tortillas added to flavor but also thickened it nicely. Used ground turkey and came out great. Will make again.

    This is my favorite chili recipe ever! Not only is it easy to make it tastes amazing! Sometimes I cheat with the spices and add a taco or enchilada packet from the store. Also love that there are no beans not just because it makes it keto friendly, but also it doesn’t upset my stomach later!

    This is a really good chilli. Although when adding all the ingredients, sealing the lid, letting it cook, i turned and there were my chopped chipotle peppers, on the counter. I reread the instructions, and it doesnt say when to add them.
    I am one who likes to follow the recipes. Would the peppers go in with the tomatoes and corn tortilla and blended?
    But other than that, it was gooooooooood!
