  • 4 slices bacon chopped
  • 4 lb russet potatoes peeled and cut in 1-inch pieces
  • 8 green onions thinly sliced, white and green parts separated
  • 1/2 teaspoon salt
  • 1 carton Progresso™ chicken broth 32 ounces
  • 1 package cream cheese cubed, softened, 8 ounces
  • 1 cup shredded Cheddar cheese 4 ounces

Instructions
  1. Spray Instant Pot™ insert with cooking spray. Select SAUTE; adjust to normal. Add bacon to insert; cook 7 to 9 minutes, stirring occasionally, until crisp. Select CANCEL. Using slotted spoon, transfer bacon to paper towel-lined plate.
  2. Stir potatoes, green onion whites and salt into bacon drippings in insert. Stir in broth. Secure lid; set pressure valve to SEALING. Select MANUAL; cook on high pressure 6 minutes. Select CANCEL. Set pressure valve to VENTING to quick-release pressure.
  3. Mash potatoes in pot; stir in cream cheese until combined.
  4. Spoon into bowls. Top with Cheddar cheese, bacon and green onion greens.

    This is a great recipe!

    The only thing I changed was I added more bacon and make sure your cream cheese is very soft, so therefore you don’t have to mash up your potatoes all the way up and you have some chunks.

    This recipe was so easy my nine-year-old son was able to help!

    Soo wonderful!! I used chicken”Better Than Bouillon” instead of broth and turkey bacon instead of pork bacon. Yummy!

    So awesome!! I cut back on the cream cheese a bit and added a 1/2 cup of sour cream because that is how I make my loaded baked potatoes. I also added a cup of finely diced leftover ham. Definitely a recipe to repeat!

    Delicious!! Be careful to scrape the “burn” bits after sautéing the bacon so you don’t get the burn warning. Great soup…will definitely make again!

    Was easy to make. No blander needed. Could use some more seasoning and more bacon. Added garlic after tasting and it too it right where it needed to be

    Delicious and easy! I did add in chopped garlic with onions & sauteed extra bacon. Will definitely be making this again!

    I used about a bag and a half of frozen hash browns instead of cutting up potatoes and it worked perfectly! Definitely needs more bacon than 4 slices and sharp cheddar is great on top! Easy and yummy! Will definitely make again!

    This was the first thing i cooked in my instant pot and we loved it! My 2 yr old demolished a whole bowl plus ate some of mine! The longer it sat, the better the cream cheese blended. Will definitely make again.
    Oh! It was cheap to make!

    I made this in my isntant pot the day i got it. It turned out so good. My family absolutely loved it. My youngest son who is a very very picky eater ate it. I will be making this many more times!!!

    I added minced garlic and Lipton Onion Soup Mix. I used red potatoes instead of russett potatoes.

    Used red potatoes, more bacon, more cheese, and no onions, however added many more spices (johnnys seasoning, onion powder, garlic salt, pepper, lemon pepper)
    I also just mixed everything together. Its delicious!
