Ingredients
  • 1/4cup miso
  • 1/4cup soy saucelower-sodium
  • 3tablespoons gochujangKorean red pepper paste, or Sriracha sauce, plus more for serving
  • 1tablespoon toasted sesame oil
  • 1teaspoon ground black pepper
  • 1 pork shoulderboneless, about 4 pounds, trimmed of excess fat and quartered
For Serving
  • Lettuce leaves
  • Radishes
  • cucumber
  • green onions
Instructions
  1. In small bowl, whisk together miso, soy sauce, 1/4 cup water, gochujang, sesame oil, and black pepper
  2. until smooth.
  3. Pour half of sauce into the Instant Pot. Add pork and pour remaining sauce over top. Cover and lock lid.
  4. Select Manual/Pressure Cook and cook at high pressure for 1 hour.
  5. Once cooking is complete, release pressure by using a quick release.
  6. Shred pork and serve in lettuce leaves with radishes, cucumbers, green onions, and additional gochujang or Sriracha.
