  • 1 1/4 pounds ground pork
  • 2 strips bacon minced
  • 1 egg mixed
  • 1/2 medium onion minced
  • 2 tablespoons almond flour
  • 1 clove garlic minced
  • 1/4 teaspoon pepper cracked
  • 1/2 teaspoon sea salt
  • 1 tablespoon tomato paste
  • 1 tablespoon liquid aminos or tamari or soy sauce
  • 2 tablespoons avocado oil or coconut oil
  • 1 1/2 cups Water or chicken stock
  • 2 tablespoons butter salted, melted
  • 1/2 teaspoon xanthan gum optional
  • 2/3 cup heavy cream 33%
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon cracked pepper

Instructions
  1. In a bowl mix the ground pork, bacon, egg, onion, almond flour, garlic, cracked pepper, sea salt and liquid aminos together.
  2. Take 2 tablespoons of the meatball mixture and shape into a ball using wet hands. Place on a flat surface such as a cookie sheet.
  3. Continue shaping meatballs. Makes about 24 weighing about 1 ounce each.
  4. Press Sauté on the Instant Pot. Once display reads "hot", add avocado oil.
  5. Carefully place half the meatballs into pot evenly spaced. After two minutes, turn them over.
  6. After a minute, roll them onto a side. After another minute, remove and set aside on a plate.
  7. Continue from step 5 to 7 with second batch of meat balls.
  8. Once the second batch of meat balls are brown, remove and place with first batch.
  9. Deglaze pot with water or chicken stock, be sure to scrape as much of the bits off the sides and bottom of the pan.
  10. Add the meatballs back into the pot along with any drippings. Press cancel on the Instant Pot to stop Sauté.
  11. Close lid and lock. Seal the pressure release valve. Press Manual and adjust to high pressure. Set time for 7 minutes to cook.
  12. In the meantime, whisk xanthan gum into melted butter.
  13. After cooking time is complete, press Cancel and Quick Release the pressure release valve. Unlock and open the lid. Remove the meatballs and set aside.
  14. Press Sauté. Whisk in butter with xanthan gum into water/stock.
  15. Next whisk in cream, salt and pepper in the Instant Pot. Let the sauce heat for 2 minutes while whisking.
  16. Add the meatballs along with any drippings into the sauce and stir around to coat.
  17. Ladle the meatballs with sauce into a bowl. Serve and enjoy!

    This was the first recipe we have made in our new Instant Pot ultra. They are delicious! I will be making them again. Unfortunately the prep time and overall time are off. There are a lot of steps to follow so it took over an hour to complete. Also the ingredients call for tomato paste but the directions never tell you when to use it so we didn’t. I would recommend trying these but be prepared to spend about double the time to complete.

    No instructions as to what to do with tomato paste, and instructions mention butter, but its not mentioned in the ingredient list. Ended up putting tomato paste in sauce because id already sauteed the meatballs before realizing there was nowhere mentioned to put the tomato paste.

    This is a super yummy recipe. I modified it by adding thick cut Crimini Mushrooms to the pressure phase. The broth picked up the mushroom taste and this easily became non-keto for my husband served over a bed of egg noodles. He was thrilled! I stayed with Zoodles. Win-Win!
