Instructions
  1. Press [Sauté] to pre-heat the cooker. When the word “Hot” appears on the display add oil to the cooking pot. Brown each half of the roast separately. Remove to a platter when browned.
  2. Turn pressure cooker off and add water and liquid smoke to the cooking pot. Add browned roasts and any accumulated juices to the pot. Sprinkle the salt over the top of the pork roasts.
  3. Press [Pressure Cook] and then use the [+] button to set 90 minutes of pressure cooking time. When beep sounds, use a natural release to release pressure (approximately 20 minutes). When valve drops, carefully remove lid.
  4. Remove the meat from the pressure cooker and shred with two forks, discarding excess fat as you shred. Add some of the juices from the pressure cooker to moisten the meat. (I used a fat separator to remove fat from the juices.)

    Not quite as tender as if done in a smoker. But considering the huge time difference, it was terrific.

    This is my family’s favorite pork recipe! I make pork roasts all the time for carnitas or Hawaiian recipes and this is the easiest, tastiest recipe of them all. I never make the other recipes I used to use. This one supercedes them all. :-9

    Love this …as a personal touch for the smoke flavor I brown 2 smoke bacon strips and add 1/8 tsp paprika 1/8 tsp cummin while I was browning the meat. By far my favorite recipie.

    I used this recipe as my “first” after buying my Insta-pot. I chose it because it was simple and didn’t need lots of ingredients. It was delicious. When i make it again, I’ll add cabbage!

    I thought the Instant Pot had to have at least 1 cup of water (the Ultra states it needs at least 2 cups) for pressure cooking…. I want to make sure that this recipe is ok with just 1/2 cup of water for 90 minutes? Also, is this ok for the 6 quart Instant Pot cookers? Thank you!

    Typically yes, but some ingredients give off liquid which adds to the amount of cooking liquid. It is okay to use less if the recipe recommends it. Most recipes are developed for the 6 quart.

    Hi LSladko,

    Saute is used to brown the meat. Pressure cooking is wet heat and doesn’t brown meat. You can skip sauteing, but it adds a level of flavour to the dish.

    I made this with 1 cup of pineapple juice, 2 tblsp of liquid smoke and some garlic powder for 7 pounds of pork cut into 14 chunks for browning and it was done in 65 minutes. Very flavorful!

    I’ve been making this basic recipe in my slow cooker for years and love it. Took 6-8 hours in the slow cooker; 1 1/2 hours (plus time to brown the meat) in the Instant Pot! And I was cooking 5 1/2 pounds of pork butt.

    I use garlic salt on all sides and I used 1 cup chicken bone broth instead of water with the liquid smoke. 6 pounds for 90 minutes cut into 4 pieces.

    OMG so good, the only change I made was adding 1/2 cup of pineapple juice. After removing the meat i added a cornstarch slurry for sauce, even my husband, the doubter loved it!
