  • sea salt
  • Mexican seasoning chili, taco, or fajita seasoning
  • 1 cup salsa your preference

  • 2 chicken breasts boneless, skinless (about 1 -1 1/2 pounds)
  • sea salt
  • Mexican seasoning chili, taco, or fajita seasoning
  • 1 cup salsa your preference

Instructions
  1. Season the chicken breasts by generously sprinkling on sea salt and chili seasoning (or other Mexican spice mix) on both sides.
  2. Place the chicken breasts directly on the bottom of inner pot of the Instant Pot. Spread the salsa over the top of the chicken.
  3. Cook on ‘Manual’ high pressure setting for 10 minutes.
  4. At the end of the cooking time, let the pressure release naturally for 10 minutes, then quick release any remaining pressure.
  5. Use tongs to transfer the cooked chicken breasts to a bowl and use 2 forks to shred the chicken while adding some of the cooking liquid back in to moisten the chicken. Tip: to shred chicken super quickly, use a hand or stand mixer.
  6. Use the shredded chicken in your favorite casseroles, freeze for later use, or simply add to corn tortillas with some avocado, cilantro and a squeeze of lime juice for a quick meal. Enjoy!

    This recipe needs more liquid. I followed the recipe and instructions and it said burn once it got to pressure. I cancelled it, flipped the chicken to make sure it was still ok. It was so I added 1/2 cup of water and a bit more salsa. It turned very well.

    First recipe in my instant pot and it was very easy. The chicken was a little over done, but otherwise it turned out well and we made tacos with it.

    Great recipe! Super easy to make. I wound up cooking the chicken a few extra minutes and it shredded very easily. The amount of liquid was perfect to keep the chicken moist. Will definitely share this one with my IP friends!!

    Still a newbie with the IP and mostly doing stews and soups so far which are fantastic. Tried this simple recipe today and absolutely fantastic. I used brined chicken breast and chili powder along with a cup of chicken broth for 30 minutes high pressure like recipe called for. Chicken was so tender literally melts in your mouth.

    Chicken was tender and shredded easily; I read the other reviews before I made this so I did alter the recipe a bit- added a bit of chicken broth, used a can of rotel instead of salsa, added extra chiles and pepper and onion strips. We like stuff spicy here so I think I will also add extra heat the next time—will make again

    After reading the other reviews I added a half cup of chicken broth. Also, I found that 10 min was not enough to easily shred the chicken. I did another 6 minutes and it was perfect.

    Wow! This is the BEST pressure cooker recipe I have ever made. I made it almost exactly the way the recipe is written, only adding 1/2 cup broth & 6 extra minutes of cooking time as I cooked 2lbs. Tender, juicy & flavorful! With my salsa, I added about 1/4 c Ortega Taco Sauce that was “Smoky Chipotle” and used some Tone’s “Southwest Chipotle Seasoning” for the chile powder—as a flavor suggestion. Prep to plate in <40 HANDS-OFF minutes—perfect.

    This was my first ever attempt with our Instant Pot. So easy and everyone (kids included) loved it. I added the 1/2 cup of chicken broth. So moist! Will make again

    This was my first Instant Pot dinner. I had planned to make chicken fajitas but then an Instant Pot arrived and i had to try it.
    Simple recipe. Easy first meal. I added onions and bell peppers to the mix. Choose a spicier salsa for heat (I ended up as dding cayenne).
    I’ll make this again.

    I wanted chicken fajitas so added big chunks of bell peppers and onions. Great meal. Definitely a go-to easy base. Chicken and salsa. Tomatillo salsa would be great too. Gonna be making enchiladas with the left overs.

    My first ever thing cooked in my pot. It was so good. I did add a little chicken broth as some comments suggested and I did 15 min bc I was scared of raw chicken. Both decisions were amazing!

    Super easy. Needed water, burning warning came one. Used approx 1/4 cup and added about 10 min for 2 lbs. Taco seasoning was kind of bland. Next time were trying the Fajita seasoning. Needs spice.
