  • 1 cup tomatoes crushed
  • 1 teaspoon creole seasoning
  • 1 tablespoon Worcestershire sauce
  • 1 pound andouille sausage pre-cooked and sliced

Instructions
  1. Set Instant Pot to “Sauté”. Coat chicken with 1 tablespoon of creole seasoning, and brown the meat on all sides. Remove the chicken from heat and set aside.
  2. Add onions, peppers, and garlic, and sauté until the onions are translucent. Add rice, and sauce for 2 minutes. Add tomato puree, creole seasoning, Worcestershire, and chicken. Close the lid and press “Rice”.
  3. When the rice is cooked, release steam, remove the lid, and add sausage and prawns. Place lid back on the Instant Pot, press “Manual”, and cook an additional 2 minutes.
  4. Serve and Enjoy!

    I used chorizo instead of the sausage and didnt brown the chicken, worked really well . I also upped the spices a little. Yum!

    List of ingredients says one teaspoon of seasoning but steps say tablespoon and then again! And no mention of Chicken broth.

    It worked out great though. Use broth before cooking with rice and use more seasoning that listed.

    I had to make substitutions and some additions but the flavours ended up being excellent. However, in the final instruction, when you release the pressure and add the prawns, there was not enough liquid in the pot to bring it up to pressure again. The minutes counted down, but nothing happened -there was no ‘pressure alert’. I repositioned the lid twice, but the same thing happened. I ended up finishing the dish in a frying pan. Disappointing.
