Horta (Greens) and Potatoes

Horta means “Greens” in Greek. Dark leafy greens, potatoes, extra virgin olive oil, and lemon are staples of the Mediterranean diet. This is an extremely healthy Mediterranean recipe that is a perfect side dish to make in your Instant Pot.

  • 2 bunches greens (dandelion, spinach, kale, swiss chard, mustard greens) washed and chopped
  • 5 in potatoes washed and cutlarge pieces
  • 1 cup Water
  • 1 cup olive oil extra virgin
  • 1+ lemon juiced, plus extra slices for serving
  • 10 cloves garlic chopped
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions
  1. Wash the greens well and chop. Wash and chop the potatoes.
  2. Peel and chop the garlic.
  3. Add everything to the Instant Pot and stir very well.
  4. Cover the Instant Pot and lock it in. Make sure the vent is set to “sealing”.
  5. Use the manual or pressure cook feature and set the timer for 15 minutes.
  6. Once the timer reaches zero, quick release the pressure.
  7. Enjoy!

    Enjoyed but next time will substitute bacon grease for olive oil and cut it back a little. Fresh garlic didn’ t add enough flavor for us so next time will also add some dry roasted garlic. Insta pot took 15 minutes fantastic!

    Can you use collard greens for the greens? I grow lots of collards. I think i would use bacon grease with the collards which is my usual way of cooking them. Adding the potatoes sounds very good.

    Potatoes turned to mush. Too much garlic. I would cook gornonly 10-12 minutes and use half garlic. Otherwise good.

    So good-i ate it as a hearty/healthy lunch. Used chicken stock instead of the water and didnt add salt.
