  • 1 small onion finely diced

  • 1/3 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 cup bourbon whiskey (optional)
  • 2 tbsp vegetable oil
  • 2 tsp garlic minced
  • 1/8 tsp black pepper
  • 1/8 tbsp cayenne pepper
Other:
  • 1 1/2 lbs chicken thighs boneless, skinless
  • 1 tbsp cornstarch
  • 1 tbsp Water

Instructions
  1. Combine the Sauce ingredients in the Instant Pot.
  2. Nestle the chicken thighs in the sauce in one layer, turning once to coat.
  3. Secure the lid, making sure the vent is closed.
  4. Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 15 minutes.
  5. When the time is up, let the pressure naturally release for 5 minutes, then quick-release the remaining pressure.
  6. Remove chicken and dice.
  7. Meanwhile, mix water and cornstarch in a small bowl, then add it to the sauce and cook 2-3 minutes until thickened.
  8. Return chicken to pot and warm though. Serve over noodles or rice.
Recipe Notes

*The Manual and Pressure Cook buttons are interchangeable.

    We just made this exactly as directed… it’s freaking AMAZING. REALLY good stuff. Now I need to figure out what kinds of sides to serve with it.

    I used chicken I had cut up and frozen. It worked great! Next time I may double the sauce recipe and figure out how to add steamed veggies to serve over rice.

    Just made this for the first time. It was delicious and so easy to make. Next time I’ll reduce the oil just a bit. Served it with gluten free pasta and green beans.

    Didn’t have boubon, so i used rum. I’ll only make it with rum from now on.

    Our app allows you to increase the serving size and it will automatically adjust the ingredient amounts. For this recipe, you do not have to add extra time, it will simply take longer to come to pressure.

    Serve over rice with a side of vegetables.

    Made this for dinner for my boyfriend’s family and they loved it! I will definitely be making this again, it was so simple and delicious!

    It went very well with sweet coconut rice and steamed zucchini on the side.
