Ingredients
  • 2tablespoons extra-virgin olive oil
  • 1medium onionfinely chopped
  • 1/2teaspoon kosher salt
  • 1/2teaspoon black pepperfreshly ground
  • 1clove garlicfinely chopped
  • 1 1/2cups long grain white ricerinsed
  • 2 1/3cups chicken brothlow sodium
  • 6sprigs fresh thyme
  • 1/2cup fresh flat-leaf parsleychopped
Instructions
  1. Press Sear/Sauté on the Instant Pot. Let heat for 3 minutes, then add the olive oil.
  2. Add the onion, salt, and black pepper to the pot. Cover with the lid and cook, stirring occasionally, until the onion is just tender, 5 to 7 minutes.
  3. Stir in the garlic and cook, uncovered, for 1 minute.
  4. Add the rinsed rice to the pot and mix to combine. Add the broth and thyme, and press Cancel.
  5. Cover with the lid and press Rice. Cook until the rice is tender and the liquid is absorbed, about 25 minutes. Press Cancel.
  6. Remove and discard the thyme. Fold in the parsley.
  7. Spoon the rice pilaf into a serving bowl.
