  • 1 tbsp vegetable oil
  • 1 onion finely chopped
  • 1 Jalapeno pepper minced
  • 1 clove garlic minced
  • 1 1/2 tsp chili powder
  • 3/4 tsp salt
  • 1/2 tsp ground cumin
  • 1/2 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1 cup chicken broth
  • 1 1/2 lbs boneless skinless chicken thighs cut into 1-inch pieces
  • 15 ounces hominy 2 cans, rinsed and drained
  • 15 ounces pinto beans 1 can, rinsed and drained
  • 1 tbsp all-purpose flour (optional)
  • chopped fresh cilantro (optional)

Instructions
  1. Press Sauté; heat oil in Instant Pot®. Add onion; cook and stir 3 minutes or until softened. Add jalapeño, garlic, chili powder, salt, cumin, oregano, black pepper and red pepper flakes, if desired; cook and stir 30 seconds. Stir in broth; cook 1 minute. Add chicken, hominy and beans; mix well.
  2. Secure lid and move pressure release valve to Sealing position. Press Manual or Pressure Cook; cook at high pressure 6 minutes.
  3. When cooking is complete, use natural release for 10 minutes, then release remaining pressure.
  4. For thicker chili, stir 1 tablespoon flour into 3 tablespoons cooking liquid in small bowl until smooth. Press Sauté; add flour mixture to chili. Cook about 5 minutes or until chili thickens, stirring occasionally. Garnish with cilantro.

    Made this in my 3 qt. Yummy and with some kick! I halved the recipe and it makes 2 good seevings.

    This is a wonderful chili!! I added two carrots i had on hand with the hominy & pintos. Great!

    Made this the other day and it was very flavorful. I didn’t have pinto beans or hominy so I used Red Kidney Beans and Garbanzo Beans. Worked out great. I highly recommend this recipe.

    My family loved this Chili. I double the seasoning minus the pepper and red flakes. My family doesnt like really spicy food. I felt it turned out to be to thin so I thickened it up some.
    I loved having the chicken chunks. It was different but tasty. I’ll make this again.

    My family loved it. I doubled the recipe (except for the onions) and subbed the jalapenos for 1 green bell pepper because my mom doesn’t like spicy food. It comfortably fed 5 once it was doubled, so if you’re making this for a bunch of boys, definitely double it. I will be making this again for sure.

    Very good, had plenty of kick. We used 4 tbs of flour to make it thicker, it seemed too watery as directed. Definately making this again

    Turned out great! I actually doubled the recipe, but next time i’ll use 1/2 hominy 1/2 corn, and Some green onions. I added cheddar cheese on the servings. This was wonderful.

    I made this last night. I had it on the wrong setting and released all the liquid. Uggggh! So, this afternoon I added the broth and all the spices again and re-cooked correctly. It was a little to liquidy so I added coconut flour mixed w/some of the broth. YUM! It turned out perfect and delicious today. Will make again!!
