  • 4 cups chicken broth warmed
  • 1 3/4 lbs skinless boneless chicken thighs
  • 4 cloves garlic minced
  • 1 onion finely diced
  • 30 oz white northern beans 2 cans drained and rinsed
  • 4 oz diced green chilis 1 cans undrained
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 2 tsp kosher salt
  • 1/2 tsp pepper
  • sour cream for garnish optional
  • chopped cilantro for garnish optional

Instructions
  1. Add all ingredients to the pot and stir to combine, then secure the lid, making sure the vent is closed.
  2. Using the display panel select the MANUAL or PRESSURE COOK function*. Use the +/- keys and program the Instant Pot for 10 minutes.
  3. When the time is up, let the pressure naturally release for 5 minutes, then quick-release the remaining pressure.
  4. Carefully remove the chicken from the pot to a cutting board and shred.
  5. Use a fork or an immersion blender to break up about half the beans.
  6. Return chicken to the pot and stir to combine. Serve hot garnished with sour cream and chopped cilantro (optional).

    This is easy and so delicious. Perfect for a winter evening. I used fresh oregano instead of dried, and did not use cilantro. I also sauted the onion and garlic in olive oil before adding tne remaining ingredients.

    This was super easy and quick. The chicken was so tender and the flavors are amazing. It has a nice little spice since i added 7oz of chillis. Great for a cold winter day. I will be making this quite often.

    This was so easy! We decided to eat it more like a White Chicken Chilli- we added green onions instead of cilantro and a few golks added cheese and Fritos.

    Terrific recipe..rich and delicious and hearty. Adding the dollup of sour cream was genius! Sooooo good.

    This recipe was perfect. Easy and flavorful. My husband raved about it. I followed the recipe exactly on spices and cook settings. My only changes were to use only one 14 oz can of white beans, added one cup of frozen corn niblets, and added one cup of shredded carrot. I made these changes mostly for color. Will definitely be making it again.

    My first IP recipe, and it was easy and delicious! Very hearty for a soup, so my husband and son loved it as a meal. Only change I made was to add a can if black beans. And yes, the dollop of sour cream is a must!
