  • 1 3/4 cups uncooked long grain rice
  • 2 tbsp butter
  • 1 3/4 cups vegetable or chicken broth
  • 1 tsp Greek seasoning
  • 1 tsp dried oregano
  • 1/4 tsp salt
  • 1 cup pitted kalamata olives drained and chopped
  • 3/4 cup chopped roasted red peppers
  • crumbled feta cheese (optional)
  • chopped fresh Italian parsley (optional)

Instructions
  1. Rinse rice well; drain in fine-mesh strainer.
  2. Press Sauté; melt butter in Instant Pot®. Add rice; cook 5 to 6 minutes or until golden brown, stirring occasionally. Add broth, Greek seasoning, oregano and salt; mix well.
  3. Secure lid and move pressure release valve to Sealing position. Press Manual or Pressure Cook; cook at high pressure 4 minutes.
  4. When cooking is complete, use natural release for 10 minutes, then release remaining pressure.
  5. Stir in olives and roasted red peppers; garnish with cheese and parsley.

    I made this. Flavour is good. But, needs a bit more liquid. I’d suggest 2 cups of broth. Otherwise, yummy.

    Good recipe but I recommend cutting the olives by half and adding a bit more broth. I added previously cooked and it was a good add.

    Remember. Some of us a nervous using this machine and to cooking in general. So, “Easy” means you provide complete details on quanity and perhaps type or suggestions. .ie Broth: what kind? How much? Thanks

This recipe is “easy” in the sense of the steps required but we understand any recipe can be intimidating when you are not comfortable yet using your Instant Pot or cooking.

    All quantities can be found in ingredients

    The ingredients state to use either chicken or vegetable broth.
