  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1 tsp garlic powder
  • 1/4 tsp cayenne
  • 1 cup evaporated milk
  • 2 cups shredded Monterey jack
  • 1 cup grated parmesan cheese
  • Salt to taste
  • Freshly ground black pepper to garnish

Instructions
  1. Combine the water, pasta, butter, minced garlic, garlic powder and cayenne in the Instant Pot. Secure the lid, making sure the vent is closed.
  2. Using the display panel select the MANUAL or PRESSURE COOK function*. Use the +/- keys and program the Instant Pot for 4 minutes.
  3. When the time is up, quick-release the pressure. If pasta is not completely cooked, use the SAUTE function and cook, stirring occasionally, for another 2-3 minutes.
  4. Add evaporated milk and cheeses, one at a time, stirring between each until the mixture becomes thick and creamy.
  5. Salt to taste.

    Super easy to make and flavor was nice. Took less than 20 min overall for us, and will make this again!

    This was really good. I used 12 oz. of pasta and 5 oz. of parmeasan and the same amount of monterey and it turned out really good.

    Has a more mature taste than most mac-n-cheeses which was nice but will probably be more well-received by adults than kids.

    It is definitely a twist on white cheese Mac and Cheese instead of the typical cheddar.

    A bit spicy. A 1/4 tsp of cayenne was a bit much, though we like spice.

    Don’t really see the point of the evaporated milk, especially since this recipe doesn’t use 1/3rd of the can. Would use 4% milk next time.

    But, it came together fast.

    This was my first Instant Pot experience. I will say it would be nice if the display counted down. As it was, I hovered over it wondering if I had screwed up and when it would be done.

    Hi pplanders,

    The countdown will only begin once it has reached working pressure. It will display “ON” while it preheats and once it reaches working pressure then it will begin the cooking time. Evaporated milk can’t be subbed by 4 % milk. Evaporated milk is made from 3% milk that has 60% of the water removed. This increases the percentage of milk solids, fat and reduces the amount of water .

    This was my first thing i made in my instant pot! Its was pretty good! I didnt think spicy at all and I dont really like spicy food. Super fast and super easy.
