Instructions
  1. Lightly grease a round cake pan with butter or oil. I used butter spray. (I have a 7 inch springform pan, that does not have a seal proof base, so I put aluminum foil to avoid any liquid from dripping out. Time to get a new pan)
  2. In a large bowl, whisk eggs, milk, brown sugar, marmalade, vanilla and 1 tsp ground cinnamon until smooth.
  3. Add bread cubes to the bowl and mix gently, so that all the bread pieces are covered with liquids.
  4. Pour in the prepared cake pan. Line up the top layer by hand so they sit flat in the pan.
  5. Cover the pan with aluminum foil (time to dig out my stainless steel plate instead to cover the pan). If you prefer to not use aluminum foil, cover the pan with a few paper towels instead. This prevents from any additional water from getting into the pan.
  6. Add 1 cup of water in the Instant Pot. Place the cake pan on the trivet.
  7. Gently put the trivet in the pot. Close Instant Pot lid with pressure valve to sealing.
  8. Cook on Manual(Hi) for 15 mins. QR.
  9. Open Instant Pot. Carefully lift the trivet with the pan, and take it out. I use paper towels to hold the trivet.
  10. Allow to sit for 5 mins. (optionally broil for 5 mins)
  11. Sprinkle more cinnamon and spread a tablespoon of butter (love salted butter here)
  12. Serve with your favorite toppings - fruit, nuts, chocolate chips and maple syrup!
Recipe Notes

Depending on the thickness of the brioche bread, you may need more or less bread slices. I used Trader Joe's brioche bread which is very thick. When you mix the bread in the liquids, there should not be too much excess liquids leftover. About 1/2 cup of excess liquids is fine. But if you have more, add another slice or 2 of the bread.

Very easy to make. I used 9 slices of Mcdonald pancakes instead. Since the pancakes has syrup already, I skipped all added sugar and i used only 1 tsp of almond extract. I added chcocolate chips in the batter.

My daughter says this is the “best thing ever”! I added a few pats of butter on top before cooking, left it in for the extra 5 mins, then under the broiler for a few minutes. We ate the whole thing!!!

It was mushy/steamed. Put under broiler, then flipped and broiled some more. Flavor was delicious. Next time ill try day old bread.

This was delicious. I poured a little golden syrup over it once it was cooked. I will be making this again

Made some slight modifications to fit my tastes. Used three small eggs instead of two large, used only one tablespoon brown sugar to cut down on sugar, and used 3/4 cup light cream, instead of 1 cup whole milk for slightly less liquid. Go the extra mile and broil the top golden brown for extra crispiness.

Made it using original IP springform pan, it came out raw looking. I flipped the entire dish into IP silicone broiling dish and broiled for 5min. It came out just the way I wanted it to. Tastes good! Easy to make!

Just got my instant pot yesterday. Made a meal and can’t wait to do more. Can this recipe be prepared the night before and refrigerated?

    Hi Lsideb,

Yes, you can make it the night before but you will need to reheat it, which may slightly change texture of finished dish due to longer overall cooking time. Simply add it back into the Instant Pot and cook for a couple minutes till it is warm (5 minutes).
