Dough Mixture:
  • 1 1/4 cup pancake mix
  • 1 tbsp sugar
  • 1/3 cup milk
Filling Mixture:
  • 1 tbsp butter softened
  • 2 tbsp brown sugar
  • 1/2 tsp cinnamon
Icing Mixture
  • 1/2 cup powdered sugar
  • 1 tbsp milk
  • 1/4 tsp Vanilla

Dough Mixture:
  • 1 1/4 cup pancake mix

Instructions
  1. In a medium bowl, mix Dough Mixture ingredients with a fork until well combined. It should resemble cookie dough.
  2. On a well-floured surface, roll dough into a 4 inch x 9 inch rectangle.
  3. In a small bowl, mix Filling Mixture ingredients and then spread evenly on the dough.
  4. Working carefully, roll the dough up from the short side. You should end up with a 4 inch long cylinder.
  5. Cut the dough into 6 equal slices and place in a 6 inch or 7 inch baking pan.
  6. Put one cup of water and the trivet in the Instant Pot. Carefully place the baking pan on the trivet.
  7. Secure the lid, making sure the vent is closed.
  8. Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 12 minutes.
  9. When the time is up, quick-release the remaining pressure.
  10. Remove the pan and set it under the broiler until golden, 3-5 minutes.
  11. In a small bowl, mix the Icing Mixture ingredients and drizzle over the rolls while still warm. Serve immediately.
Recipe Notes

*The Manual and Pressure Cook buttons are interchangeable.

    I used homemade pancake mix and they were anything but fluffy. What am I missing? It calls for an egg and oil. Would this work if i add that?

    Twice I’ve tried them I think the filling recipe needs to be doubled and it should include the icing recipe in writing

    No ingredients listed for icing. Agree with other users needs double filling. Otherwise pretty good!

    Taste was really good. We thought the roll was slightly dry. Will try cooking for only 10 minutes next time. We also used pillsbury icing instead of making the powdered sugar icing.

    I didn’t see where it had to go under the broiler in the video. Figured it out and it turned out fine. A bit doughy still.

    Didnt turn out. Dough was extremely dry so had to add 3 times the milk the recipe calls for, same with filling. After cooking, the dough didn’t seem like it was cooked at all, going to try putting in oven to finish baking.
    * I used gluten free pancake mix which could be part of the problem I had.

    Dough is dry and doesn’t rise nearly as much as pictured. Definitely not light and flaky like the picture. Save yourself the trouble and get a can of Pillsbury cinnamon rolls.

    New to rhe instant pot made these this morning doubled everything (big family)made a foil sling to pull my pan out I was very sceptical thaught they would come out soggy nope perfect i did add a couple of minutes to the time i will make these again

    If you can safely fit two baking dishes on top of each other but it may be easier to cook multiple batches.

    Used store bought “fluffy pancake mix”, dough mixed and rolled out well. Placed in springform pan, covered with foil, placed on trivet and placed in instant pot (water already in pot) for 12 mins. Didn’t rise…flat, not fully cooked…what went wrong?

    Used a whole wheat pancake mix. Had to add more liquid-was dry and crumbly otherwise. Not enough cinnamon mixture. Top of buns wet from steam, should cover with foil like cheesecake. Finished product dense.

    Not fluffy like described. Dough didnt rise, dough wasn’t great. I doubled up on the filling in the middle, but didnt help. The icing was mediocore. Wouldn’t make this again.

    “Pancake mixes” are all different. It would be nice if this recipe simply listed the equivalent ingredients. I tried once with Bisquick and they rose perfectly, but had that Bisquick taste. Next time I used a high end pancake premix. I had the dry, crumbly dough problem others described, and they didnt rise at all. Just stayed doughy. Disappointing.

    I used Aunt Jemina “just add water” pancake mix. This is the 3rd thing ive made in my instant pot my sis bought me and they were perfect. They actually started rising while i was making the filling. They were actually perfect. I fhink i may increase my filling amount by 1/4 next go round.

    I found these to be delicious but I would probably put in yeast the day before in order to make them thicker.

    Typically deserts do not come out dry as it is cooked with wet heat. The pancake cinnamon rolls only need to be under the broiler for a little bit; this may have been where it dried out. The icing will be runny depending how hot the rolls are.
