Cilantro-Lime Rice

  • 1 cup long grain white rice
  • 1 garlic clove minced
  • 1 1/4 cups low-sodium chicken or vegetable broth or water

  • 1/2 teaspoon grated lime zest optional
  • 2 teaspoons freshly squeezed lime juice

Instructions
SAUTÉ THE RICE.
  1. Select Sauté and adjust to heat to Medium. Add the oil to the inner cooking pot. When it shimmers and flows easily, add the rice and garlic and stir to coat the rice with the oil, cooking for about 1 minute, or until the garlic is fragrant. Add the broth and salt.
PRESSURE COOK.
  1. Lock the lid into place and turn the valveto “sealing.” Select Pressure Cook or Manual and adjust the pressure to High. Set the time for 7 minutes. When cooking ends, carefully turn the valve to “venting” to quick release the pressure.
FINISH THE RICE.
  1. Unlock and remove the lid. Add the cilantro, lime zest (if using), and lime juice. Stir very gently to combine. Put the lid back on the pot but do not lock it into place. Let the rice sit for 3 to 4 minutes. Fluff with a fork.

    I haven’t had Chipotle’s version so I couldnt compare.
    The flavor was good, it just needs more liquid because the bottom burned…I just scrapped it together with the rest adding a little crunch.

    We loved this rice. My 2 yr old grandson ate 3 helpings. I doubled the Recipe, everything but the oil and cilantro. It came out perfect
