Pot Mixture:
  • 3 cups fresh salsa 24 ounces
  • 1 oz taco seasoning 1 package
  • Zest and juice of 1 lime
  • 1/4 cup Water
  • 15 oz black beans rinsed and drained 1 can
  • 2 lbs boneless, skinless chicken breasts
  • 1 jalapeno seeded and diced (optional)
To Finish:
  • 1/2 cup chopped fresh cilantro
  • white rice quinoa, or tortillas (optional)
  • avocado lime wedges, sour cream, shredded cheese (optional)

Instructions
  1. Add Pot Mixture ingredients to the pot and stir to combine.
  2. Secure the lid, making sure the vent is closed.
  3. Using the display panel select the MANUAL or PRESSURE COOK function*. Use the +/- keys and program the Instant Pot for 12 minutes.
  4. When the time is up, let the pressure naturally release for 10 minutes, then quick-release the remaining pressure.
  5. Carefully remove the meat from the pot to a cutting board and shred.
  6. Return the shredded meat to the pot and add cilantro. Stir to combine.
  7. (Optional) Serve over rice, quinoa or in warmed tortillas. Garnish with lime wedges and cheese.

    So tasty! This recipe is a keeper! I added a small can of green chilies,1 jalapeno, 1 bell pepper and one full cup of water.
    My husband loved this recipe!

    Tried the recipe tonight for the first time. But my pot said burn. Nothing seems burnt but the chicken was kind of stuck to the bottom so i added more water. See what happens. It does smell wonderful

    This came out really well. I just had to add a little water as it said burn twice during cooking.

    I liked this recipe, my kids did not like the cilantro to much but everyone enjoyed it. I got the burn notice but added more liquid.

    Great flavor! I added more water (3/4 cup rather than 1/4 cup) based on the other reviews. It did burn a bit on the bottom, but it was still excellent.

    Easy and excellent the Rice prepares at the same amount of time on the stove top as the chicken takes in the Insta pot. I did not have salsa so I substituted 2 cups of diced tomatoes and 2/3 cup ketchup with a little bit of Worcestershire sauce and tamariAnd oyster sauce.Wonderful

    I made this with Garden Fresh salsa and diced tomatoes with green chili’s (3 cups combined) to make up for not enough salsa and no jalapeño. Also used 2.85 pounds of chicken breasts.
    My results were too watery which diluted the seasonings. Not sure, but the chicken probably added significant liquid. I’ll try it again sticking to the recipe.
