  • 1 tablespoon vegetable oil
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 cup white onions diced
  • 28 ounces crushed tomatoes 1 can
  • 5 medium poblano peppers roasted, peeled, seeded, cut into 1/4-inch thick strips
  • 1-2 chipotle peppers in adobo sauce, finely chopped
  • white onion chopped
  • cilantro chopped
  • Lime wedges optional

Instructions
  1. Season beef with black pepper and salt.
  2. Add beef, onion, tomatoes, poblano peppers and chipotle peppers to the Instant Pot and stir to combine.
  3. Cook on slow cooker setting on High for 4 to 6 hours or on Low for 8 to 10 hours, or until beef is fork tender.
  4. When time is up, slow release pressure. Remove beef; keep warm.
  5. Skim fat from cooking liquid. Spoon cooking liquid over beef.
  6. Sprinkle with chopped onion and cilantro, as desired. Garnish with lime wedges, if desired. Enjoy!

    Cook time was way off. Not even close to being done at 4 hours. A lot of excess liquid as well.

    This recipe can work, you need to brown the ribs on all sides in the IP with oil and a little ghee. Then do not slow cook, but pressure cook for 30 minutes and natural release. Your meat will fall off the bone.

    I dont understand how they can put such badly written recipes on here. This one set my alarms off when it didnt say to brown the ribs. And then it says to set it on “slow cook” for four hours and then directs you to “release the pressure.” There isnt going to be pressure on slow cook and the recipe is listed as a “pressure cooking” recipe in the description. This is sloppy, to say nothing of irresponsible. Ingredients are expensive.Regular homes aren’t test kitchens with inlimited cash to burn.
