Instructions
  1. Add olive oil to the Instant Pot. Using the display panel select the Saute function.
  2. When oil is hot, add minced garlic. Cook and stir 1-2 minutes until garlic just begins to brown.
  3. Add all remaining ingredients (except avocado!) and mix well with wooden spoon, being sure to scrape any garlic bits from the bottom of the pot.
  4. Turn the pot off by selecting CANCEL, then secure the lid, making sure the vent is closed.
  5. Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 10 minutes.
  6. When the time is up, quick-release the remaining pressure.
  7. Turn the pot off by selecting CANCEL, then using the display panel select the SAUTÉ function. Cook and stir, breaking up meat into small chunks, until liquid has been reduced by half.
  8. Allow to cool and serve in a bowl, surrounded by diced avocado.

Easy, quick and tasty! Substituted a ribeye in place of plank steak-served it over mixed greens with cheese!
