Ingredients
Chicken Tortilla Soup:
  • 1 lb frozen chicken breasts (about 2 breast )
  • 14.5 ounce black beans 1 can rinsed and drained (or 2 cups cooked)
  • 2 cups frozen corn
  • 1 large onion finely diced
  • 1 cup diced tomato
  • 6 ounce tomato paste
  • 32 ounce chicken stock or vegetable stock
  • 1/2 cup pickled jalapenos diced in their juice (optional)
  • 1/4 cup prepared taco seasoning ( 1 pouch )
For Serving:
  • 2/3 cup shredded mexican blend cheese
  • 4-5 cups tortilla chips
  • finely chopped cilantro for garnish
  • Diced avocado for garnish

Instructions
  1. Place all ingredients in the Instant Pot. Secure the lid, making sure the vent is closed.
  2. Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 15 minutes.
  3. When the time is up, quick-release the pressure. Shred any remaining large pieces of chicken and return to the pot.
  4. Meanwhile, in each serving bowl place 2/3 cup tortilla chips sprinkled with 2 tablespoons shredded cheese. Ladle hot soup over chips and cheese just before serving.
  5. Serve with diced fresh avocado and cilantro.

    This is the worst recipe I’ve gotten off this app. I’ve tried numerous recipes and have been pleased until now. The instructions are vague. The recipe calls for using frozen chicken breasts but does not say to defrost them. Just says to put everything into the pot and cook. After cooking an extra 15 minutes, The chicken still was not cooked. Had to cook it an extra 25 minutes in total. I will not use this recipe again or suggest it to anybody else.

    Delicious! Added extra black beans and diced tomatoes. Used Dizzy Pig Fajita Seasoning instead of the taco. My family loved it!

    Loved this! Here are some changes I made to the recipe when making it. I diced and sauted chicken and onion first. Then, placed everything in to the pot. I also reduced by half the jalapenos and diced tomato.

    I have a mini, so i halved the recipe yo make sure it fit. More like a chili, bur super yummy! Will definitely make it again

    Hi Wendy,

    If a recipe calls for a frozen item but your item is thawed or fresh the cooking time may need to be adjusted. When adjusting cooking time always ensure that the meat has reach safe eating temperature for that food item.

    Recipe turned out great! I had a 48 oz box of Chicken Stock instead of 32 oz, I used 32 oz (4 cups) in the Pot and after cooking brought the rest of the leftover broth to a boil on the stove and added it to the final product to make it more brothy

    I would add time for frozen chicken breasts. I tried 17mins. One of the breasts was still slughtly under done. I think 20 minutes would do it.

    When using frozen meats cooking times may need to be altered. Always check to ensure proper cooking temperature was reached.

    We used fresh chicken that had been chilled from the grocery store. It came out Extremely tender and was easy to shred. Keeping this one saved to make again on a rainy day!

    Whole family loved it. Used fresh chcken. I will try cutting off 2 minutes next time. My chicken came out a touch dry and I used 3lb of chicken instead of 2lb.

    Pretty food recipe. Easily tweakavle which i like. I upped the chicken to 1.5 lbs, used fresh chicken and 15 mins was just fine, shredded very easily. I also did a little more than one packet of taco seasaoning, but what really made it better was i used a small can of adobo peppers in adobo sauce. Really added to the flavor well. Highly recommend adding it

    So tasty! Myself and my boyfriend loved it. Was my first instant pot recipe and was a definite success. I used thawed BL/SL chicken thighs instead of breasts and it worked judr fine. I subbed the beans for carrots and celery as i’m not a fan of them. Still came out awesome!

    So delicious and full of flavor! I used diced tomatoes from a can and taco seasoning that I buy from Costco which has a little heat and much more flavor that the taco seasoning packets. I also used fresh chicken and still cooked for 15 minutes and it was perfect. I will definitely be making this again!

    Great, simple recipe! We’ve made this 4 times now and love it! We pretty much never have the energy to cook when we get off work, so being able to just throw everything in the pot and walk away is perfect for us. Since we like to make this with frozen chicken, we defrost it in water for a few minutes if we have time and pressure cook the frozen or partially frozen breasts for 25 minutes instead of 15. I’d also recommend adding some chopped fresh jalapeños/hot peppers to make it a bit spicier.

    Excellent. I added 1 1/2 limes to the mix. I also did not put the tomatoes into the instant pot but added them after pouring the soup in the bowl to keep them somewhat fresh. Really great flavor and amazing how a completely frozen piece of chicken breast can turn out so well

    This is very good. I didnt have jalapeno so used 1 chipolte chili in adobe sauce instead. Needed more corn so added about 1 cup frozen ans let it simmer for a bit. Will definately make again.

    I liked it. I used a can of diced tomatoes (including the juice) instead dicing a tomato. It was more tomato flavored but very good. Also added an entire lime squeezed and a little extra broth. Very good. Will make it again for sure.

    This was super easy and delicious. I used fresh chicken but reduced the cook time to 12 minutes which worked perfectly. Used 1 can of diced tomatoes with juice instead of the fresh tomato and didn’t have tomato paste so left that out. Made my own taco seasoning and also added 1/2 cup+ of leftover rice which was yummy.
    Taco seasoning:
    1 tbsp chili powder
    1/2 tbsp cumin
    1/4 tbsp paprika
    1/4 tbsp salt
    1/2 tsp oregano
    1/4 tsp garlic powder
    1/4 tsp onion powder
    1/4 tsp black pepper

    Absolutely delicious! I used fresh chicken breasts, a 28oz can of crushed tomatoes, a can of white kidney beans (what I had on hand), added some frozen corn and cooked it on high pressure for 12 minutes. I topped it with pepper jack cheese, diced avocado and seasoned tortilla strips from the store and it was absolute perfection!

    This soup is so good! Is says use frozen chicken breasts but should say thawed breasts. Put everything in pot except avocado cilantro cheese and chips. Tweak recipe with a little lime juice and a dollop of sour cream and you will be in flavour country

    This soup is amazing!!! I did add some lime juice at the end to cup some if the tomato acidity and it was just what it needed! About half a lime to the whole pot.

    Love this recipie!
    Left out the jalapenos and just added a can of rotel for the tomatoes. Turned out perfectly. Topped with sour cream. Family loved it!
