Chicken Adobo Burrito Bowls

Instructions
  1. In a small bowl or measuring cup, whisk together the vinegar, soy sauce, and sugar. Set aside.
  2. Spread half of the sliced onion in an even layer in the bottom of the Instant Pot®. Top with the ginger and garlic, distributing them evenly. Arrange the chicken pieces in a single layer over the onions. Sprinkle with 1/4 teaspoon salt and 1 teaspoon pepper, then cover the chicken evenly with the remaining onion slices. Pour the vinegar mixture over the chicken. Lock the lid in place and turn the valve to Sealing. Press the Pressure Cook button and set the cook time for 15 minutes at high pressure.
  3. Let the steam release naturally, or for at least 15 minutes, before turning the valve to Venting to quick-release any residual steam. Carefully remove the lid and use tongs to transfer the chicken to a plate. Using two forks, shred the chicken.
  4. Serve the chicken over individual bowls of rice with your choice of accompaniments. Drizzle some of the cooking liquid on top of the shredded chicken, if desired.

    Really amazingly good—tastes like much more than the few ingredients used. Also did pot-in-pot brown jasmine rice at the same time, which came out perfectly (1:1 ratio rice and chicken broth).

    Pretty decent recipe, but could totally use some spice/flavor in the liquid that goes on the chicken.
    Great for a quick, fresh, fast and easy dinner.

    Nice flavor

    From frozen, 4 boneless thighs, high pressure for 10 min, natural release, shred – not quite done, so high pressure for another 3 min, quick release

    Might thicken sauce with cornstarch next time.

    This was a hit for my family. I made the following substitutions based on what was in my pantry- sub rice vinegar for white wine vinegar and sub brag’s liquid aminos for soy sauce.

    Very tasty and flavourful, my chicken was perfect! A hit in my house hold and a pretty easy recipe to follow. I did the pot in pot method with basmati rice and it came out awesome with the 1:1 ratio and a little olive oil mixed in before adding water.

    Quick, easy and really good. I will make this many times again. I did add garlic, and cayenne pepper to my black beans.

    I’d give it 5 stars but it needed a bit more salt, and not sure we need the ginger. Super tender and delicious chicken. Will make this again with minor modifications.

    It was so good! I ended up useing jasmine rice, hard boil eggs and the chicken just fell apart. I will be making this again and again.
