Carrot Halwa
Carrot halwa AKA ‘Gajar ka halwa’ is a traditional Indian dessert made with grated carrots, ghee and aromatic cardamom and saffron.

Ingredients
  • 2tablespoons gheethe ghee butter can be subbed for a vegan butter to make the recipe vegan.
  • 10cups carrotspeeled and grated (About 6 packed)
  • 1cup almond milkunsweetened
  • 3/4cup sugar
  • 1cup almond meal
  • 2teaspoons cardamom powder
  • 2tablespoons raisins
  • 1/2teaspoon saffron
  • 2tablespoon Almondsor pistachios, sliced (for garnish)
Instructions
  1. Turn Instant Pot to Saute mode and adjust to high heat. Add ghee and grated carrots. Cook for 2-3 minutes with the glass lid on.
  2. Add almond milk and close the lid with the pressure value set to sealing. Set Instant Pot to cook on Manual and adjust to high pressure for 5 minutes. Quick release pressure when time is up.
  3. Add sugar, almond meal, cardamom powder, raisins and saffron. Mix well.
  4. Turn Instant Pot to Saute on high heat again and cook for 5-7 minutes, until most of the liquids are evaporated.
  5. Garnish with sliced almonds or pistachios. Serve hot or chilled. Enjoy!
