Good soup, but would be more like caldo verde with half as much kale.
Substitute the potatoes for radishes to make this a keto dish.. i haven’t tried it but im sure it would work.
Such a great recipe. My kids prefer a more smooth soup so I saute the sausage, add the leeks, then add the potatoes, broth and kale and then set to manual for 8 mins. Then puree everything with an immersion blender. Yum!
