  • 3-4 slices Ginger fresh
  • 1 green onion rinsed and chopped into 2 inch-long pieces
  • 1 star anise
  • 2 cloves
  • 1 1/2 tablespoons anka sauce or 1 1/2 teaspoons red yeast rice
  • 1 tablespoon cooking wine
  • 1 1/2 tablespoons dark soy sauce
  • 2 tablespoons light soy sauce
  • 1/2 teaspoon salt
  • 1 1/2 tablespoons honey
  • 4 tablespoons Water

Instructions
  1. Wash the ribs with warm water and cut between bones into small pieces. Soak ribs in boiling water for 2 minutes, drain, rinse and drain.
  2. Add 1 tablespoon of oil to the Instant Pot pressure cooker , select “Saute” function and adjust to “High”.
  3. Sauté green onion, ginger, anise and cloves for 1 minute.
  4. Add anka sauce or red yeast rice and ribs, stir and cook for 2 minutes.
  5. Add cooking wine and stir a few times. Add in the light and dark soy sauces, salt, water and honey.
  6. Cover the lid and place the pressure valve to “Seal” position. Press “Manual” button and set 35 minutes of cooking time.
  7. When the program is done, wait allow pressure to naturally release for 5 minutes. Slowly release the remaining pressure then open the lid.
  8. Select “Sauté” and set temperature to “high”, stir occasionally until the sauce is reduced to 1/4 of its volume.
  9. Place the cooked meat into to a serving bowl, serve immediately over rice. Yummy!

    I was very inspired by the recipe. Here’s what I actually did:

    Instead of adding the ingredients into the pot as directed, I mixed up a soy/sesame/hoisin/pepper miso/ginger/mirin sauce and marinated the ribs for about 5 hours. (NB this is a different sauce from that in the recipe. Some of the ingredients in the original would be hard to get in Mexico.)

    I also put the ribs on the rack with the sauce underneath, to avoid the “boiled texture.” That seems to be a valid approach. Ultimately, t

    I modified the recipe quite a bit, but this app won’t let me explain what I did. I think the chef had a great idea, and it inspired me. It should work well for you.

    Anka sauce is hard to acquire in local stores
    Char Siu sauce is a great alternative.

    I would also suggest using pancake (not Maple)syrup if honey is not accessable

    Very good, but very salty. I would recommend using low sodium soy sauce and no extra salt. You can always add salt later, but once it is cooked in the salt there is no going back. Overall, it is a very good recipe.
