  • 2 tbsp butter sliced into 6-8 thin pieces

  • 1/4 cup cream cheese softened ( 2 ounces )
  • 1/4 cup milk
  • 1 tbsp sugar
  • 1 tsp almond extract
  • 1/2 tsp cinnamon
  • 1/4 tsp kosher salt
  • 1/4 cup slivered almonds divided
  • powdered sugar for serving
  • maple syrup for serving

Instructions
  1. Coat the inside of a 1.5 quart baking dish with non-stick spray. Layer blueberries, bread and brown sugar. ensuring blueberries and sugar are evenly distributed throughout.
  2. Sprinkle with half the slivered almonds and dot the butter evenly over the top.
  3. In a large bowl, thoroughly whisk together the eggs, softened cream cheese, milk, sugar, almond extract, cinnamon and salt. Pour over bread and blueberries, making sure all bread pieces are moistened.
  4. Pour 1 cup of water in the Instant Pot and put in the trivet. Cover the baking dish lightly with foil (do not seal) and carefully set the baking dish on the trivet.
  5. Secure the lid, making sure the vent is closed.
  6. Using the display panel select the MANUAL or PRESSURE COOK function*. Use the +/- buttons and program the Instant Pot for 25 minutes.
  7. When the time is up quick-release the remaining pressure.
  8. Carefully remove the baking dish from the pot, remove the foil and allow to rest for 5-10 minutes until set (or, optionally, set banking dish under the broiler until golden, 3-5 minutes).
  9. Serve with remaining slivered almonds, powdered sugar, maple syrup and additional blueberries, if desired.

*If your Instant Pot does not have a MANUAL function, use the Pressure Cook function.

    Really easy and everybody loved it! I’m a non-cooking dad so all were amazed at results. Be sure to put under broiler fo 6 minutes before serving.

    This is super easy and delicious. Its not very “pretty”, but its perfect for a lazy Sunday morning or the morning of a holiday (like Christmas).

    Wow! That was good but too sweet for me. I used frozen blueberries which worked just fine. Instead of remaining solid it just kind of crumbled. It wasn’t pretty but topped with powdered sugar and whip cream it looked awesome. My kids loved it. One serving was definitely enough. Serve with eggs if you want more.

    Fluffy and tender, delicious! Be sure to blend in the cream cheese well. It tends to clump and stay on top of tge casserole.

    This was delicious very easy to make. We added a next your egg in a little bit more milk sugar and cinnamon. Put in the broiler at the end on low for three minutes.

    How does one get 7 cups of bread, 2 cups of blueberries plus all the other ingredients in a 1.5 quart (6 cups) container?

    Hi jcorpus,

    7 cups of bread and 2 cups of blueberries does seem like a lot for the 1.5 quart (6 cups) container but there will be enough room since the liquid will be absorbed by the bread.

    EXCELLENT ! Dont need to change a thing. I’m a big fan of almond extract in baking and that is the perfect touch for this breakfast. Mmmmm!

    Hi Lsideb,

    Yes, you can make it the night before but you will need to reheat it, which may slightly change texture of finished dish due to longer overall cooking time. Simply add it back into the Instant Pot and cook for a couple minutes till it is warm (5 minutes).
