I made this dish for my kids, one of which is incredibly picky about his food. Both of them LOVED it!! It was a big hit all around!!
Amazing recipe. I used chicken stock instead of water to cook the rice. I also sliced the chicken into strips and sauced them until they were nearly cooked and them removed them and deglazed with the chicken stock
Very tasty ! I upped the spices with a teaspoon of Better Than Bouillon in the mix and a dab of Sweet Chili on top. Will make again!!

Amazing recipe. My only alteration is I use chicken stock instead of water and I cook my chicken in the instant pot with vegetable oil and sesame oil prior to making rice.
This was the first thing that i made when i got my insta pot. Better than the resturants becsuse it wasnt real salty. Will diffiantly make this again.

We used leftover steak instead of chicken and used half brown and half white rice. We also added chopped celery (with the onions) and peppers(with the steak). My daughter asked when we could make it again!
Found it dry. Maybe i used the wrong kind of white rice. I used Basmati. Otherwise it was good.

My first Instant Pot recipe! Really liked it, and definitely used chicken broth instead of water.
If I wanted to make twice as much, is it OK to double everything, or does that somehow change the texture of it? Made it last week, and my kids ate all of it before my wife could have any, so making it again tonight.

Our apologies on the late response.
You can definitely double recipes and it won’t change the texture. Typically you do not need to adjust the time either.
What you need to watch out for when doubling recipes is if it is food that expands like rice it cannot be filled more than the 1/2 mark on the inner pot. This includes the liquid you add and dry food cannot pass the halfway mark on the inner pot.
For all other food, it cannot pass the 2/3 mark on the inner pot.
This was excellent and the directions were easy to follow. We added extra onions and mini carrots that we had lying around. Next time we will try with chicken broth.
