Instructions
  1. Add first three ingredients to Instant Pot, secure lid and put valve into secure pressure setting.
  2. Select Manual and adjust to high pressure. Adjust cooking time for 45 minutes - 45 minutes provides extremely tender meat.
  3. After the cycle is complete allow to rest for 10-minutes before quick releasing pressure manually with valve.
  4. Remove lid and stir. Add vegetables, ensuring you stay below the maximum fill line. Put the lid back on and secure the valve to pressure.
  5. Select manual again, and set time between 5 and 15 minutes. Selecting 15-minutes results in really tender vegetables, adjust to your liking.
  6. Allow to sit after cycle is complete for 10-minutes and release pressure. Serve and enjoy!
  7. Note: Any vegetables can be used in this stew, these were the vegetables available at the time of creating the recipe. If you prefer other vegetables in your stew, simply change them!

Easy and delicious! I subbed half of the water for beef broth for some extra flavor.

Veggies we used were bag of frozen sweet corn, celery, carrots, radishes, potatoes and green beans.

This will be a great winter meal!

This was my first recipe with my Instant Pot! I added more veggies and my husband loved this stew. The consistency was amazing and the beef just fell apart! Will make again!

My first recipe in the instant pot. The beef was fall-apart tender and the veggies were perfect in 15 min! Delicious! Only thing…. it was more of a soup than a stew, but still amazing.

  4. timdennehy
    timdennehy says:

This was a great first recipe for me and the Instant Pot. The beef was incredibly tender, but I think the veggies were a bit overcooked at 10 mins. The time started by the recipe doesn’t include two warm-up (one for the beef, a second when you add the veggies) cycles, which together add about 20mins to the total time.

  5. Theebigticket
    Theebigticket says:

This was my first recipe using instant pot as well. Beef was cooked perfectly, and 12 minutes on the veggies was plenty (I would do less next time). Flavor was OK; might use a different flavor packet next time, use a tiny bit less water or sub some beef broth for water as someone else mentioned or add some red wine.

I was concerned that it might not all fit below the max fill line for my 6 qt. instant pot, so i cut thr recipe in half. This amount was good for 2 or 3 people. I am wondering if those that tried this put the full recipe in a6 or 8 qt. Pot?

  7. Beez783

I have the 8qt pot and used the full recipe. It was just above the 1/2 mark on the pot. Great first recipe!

  8. jcalvert
    jcalvert says:

After viewing other comments i changed the 4 c. Water to 1 15 oz can beef broth and 1 1/2 c. Water. I also used 2 rounded tbls of flour to coat the stew meat and saute it in a skillet before placing in instant pot with broth and water. Had a thick flavorful sauce which could be thinned with water if desired.

  9. Saddyspot
    Saddyspot says:

I made this for lunch today and it was a hit. I used half an onion instead of a whole one, 4 carrots, maybe 6 celery sticks, and added garlic. I substituted 2 cups of chicken broth that i made yesterday for the water. We will definitely make this again. I think the time listed is a bit short, as another person commented. I planned on just over an hour, and it ended up taking closer to 2, since my stew beef was still partially frozen when i started. Great recipe though.

First time using my Instant Pot! Love this recipe. Took closer to two hours from start to finish. I used beef bone broth instead of water! So much flavor. I was able to fit entire recipe in my 5qt IP perfectly. Definetly will be making this again as it was a huge hit for my family of 4.

    Sullivanclan says:

This was a nice first for the instapot. Saute first, then meat, then vegetables. I used chicken broth instead of water. Did vegetables for 8 minutes instead of 15. Used a small cinnamon stick and bay leaves. Super good, meat very tender. Next time Guinness!

  12. BusyMama3
    BusyMama3 says:

This was AMAZINGLY good! Meat was so tender, I did lightly coat the beef with seasoned flour and sauted for a few minutes, then proceeded with the rest of the recipe. I have a 6 quart pot and used all the veggies listed, except mushrooms instead of green beans, and it filled the pot halfway between the 1/2 mark and the 2/3 mark. I highly recommend this recipe!! It did take 2 hours from start to finish.

  13. 2DogMom
    2DogMom says:

This is the first recipe I made in my InstantPot. It took a little over two hours because I sauteed the meat first. I used 2-1/2 cups of Cabernet Sauvignon and 1-1/2 cups water. I set the pressure at 40 minutes Instead of 45. And after taking the meat and veggies out of the inner pot, I thickened the gravy with some flour. Hubby and I found some spinach noodles yesterday so I cooked them and served the stew over them for a scrumptious meal.

    First ever in the instantpot
Cook time does not reflect pressure up or depressure times. But was a hit with two picky eaters i subtracted the green beans one less fight and 3 cups water one cup beef broth will add 2 packs of seasoning next time and the beans made 5 healthy portions

  15. Sgrondin

Worked out great, at the end I took out everything except the broth (instead of water) and added cornstarch/flour to thicken and then mixed. Tastes great and cant wait to have stew for the next week for leftovers 🙂 just wish I had breadbowls….

    Twiffers says:

This was my first recipe using my IP (DUO plus 60 – 6qt). I added a few cloves of garlic and dumped them in along with the first three ingredients. – I would actually add more next time. I also used one pkg of McCormick Slow Cooker Beef Stew mix and for the second pkg, I used Pioneer Roasted Beef Gravy.
For the liquid, I used 1 cup of red wine, 2 cups chicken broth (only broth I had on-hand) and 1 cup water. Veggies- I used potatoes, carrots, onion, celery, and fresh green beans.

  18. Mrmckaye
    Mrmckaye says:

I will give 5 stars but as written it is a 4 star recipe. Using water and the McCormack spice packets just didnt cut it. Next time I would use some stock instead of water and some read wine. Maybe add the wine when sauteeing the beef at the beginning. Beef was perfectly tender but the veggies a little over done for my tastes.

  19. mmarques
    mmarques says:

This recipe is easy, but beware that the time listed is only the cook time. With so much liquid, it take a long time to come to pressure. The second tume is not as long, as the liquid is still warm. And there are 2 NPR’s. Total time was close to 2 hours.

This stew is not the most flavorful, but at least I replaced water with beef stock. Next time, I will start by using sautee for the meat and onions before adding the liquid. For the liquid, I’ll try 3 cups beef broth and 1 cup wine.

  20. CuppaJoe
    CuppaJoe says:

I used an Instant Pot Mini 3-quart for this. The first time I used 1-1/2 pounds of stew meat. There wasn’t much room for veggies. The second time, I used two pounds of stew meat and did the second stage in two batches adding lots and lots of veggies, right up to limit line. Delicious! It’s an excellent way to get extra veggies into my diet.

Made this tonight. Like others we found total time was 2 hours w/ set-up, warmup of instant pot and natural releases. We used 2 packets of McCormik Beef Stew seasoning. It seemed a bit too much. Will try one packet next time. Cooked the vegetables for 7 min and they were perfect.

Pretty good. The meat was tender. I like my veggies falling apart, but if you like a bit more body to them, you may want to just do 10 mins instead of 15 for that second stage. I used one pack of Club House beef stew seasoning and it’s flavorful enough. It’s a bit watery, but will likely thicken up as leftovers.

Its great stew, but the time to cook is longer than 1 hour. Its a total of 90 mins to cook/let sit. Id recommend it, its just very time consuming.

  30. Minefield
    Minefield says:

A lot of recipes in this book have inaccurate times for cooking … with pressure cooking the ‘de-compress’ time must be factored in. This beef stew is more like 90 to 100 minutes. Read and add before cooking any of these recipes.

Cut everything in half for two people. I make a lot of this now. I love it! Personal preference add 1 cup broccoli and slightly more broth. Im sparing on onion. I also add olive oil and Saute the beef first. Butter isnt bad either and of course pepper and salt. I add the butter in with the veggies.

First time using my pot i didnt want anything complicated. I love stew but hate waiting all day. Times are inaccurate they don’t consider heat up and cool down so add 30+ minutes to cook time. Apparently some of the pots have slightly different control panels but i figured it out.

  40. nicoyabeauty
    nicoyabeauty says:

came out good! I used beef broth to use with my beef stew mix and only used 2 cups of the broth instead of what was stated. I used only potatoes cubed and onions and 10 min. was perfect to get them nice and soft.

  41. bonoz3612
    bonoz3612 says:

Very tasty stew and easy to make. I used potatoes and root veggies and it worked really well. Meat was just as tender as everyone described. I used a stew gravy i found on the supermarket instead of the packets and used a can of beer and one cup of water. I coated the meat in flour and sauteed. This did result in my pot flashing Burn due to the residue at bottom of pot but it did not impede the progress of my stew. The manual suggested you wait until end to add any thickening agent.

I have the mini instant pot (3 qt). I combined my usual recipe and this one. I always ad at least 15minutes for heat up.
1.5 stew meat, browned in 2 TBS olive oil
    2 cups beef stock
    2 cloves crushed/chopped garlic
    Handful of chopped onion
    1TBS worchester sauce
1TBS Bouquet garni spice (only because I had it in drawer
    1/2 tsp paprike
    2bay leaves
    5 small red poptates cubed
    1 cup chopped carrots
    1/2 cup ruff chopped onion
    8 cut mushrooms
    1/2 celery stalked
    Forget the green beans.

  50. Denmart
    Denmart says:

Made this yesterday and it was wonderful. I tweaked it sonewhat by adding only one seasoning packet and using beef broth instead of water. I also added some sherry cooking wine for enhanced taste. The one thing I would do differently is cook the vegetables for no more than 10 minutes, as 15 minutes was way too long and broke up the veggies into small pieces.

  52. Sam and phil
    Sam and phil says:

I used chicken/beef broth instead of water and also browned the seasoned meat on all sides before presure cooking. I used sweet potatoes to make it more paleo, but 15 mins pressure cook at the end made everything too tender.. I recommend 11 mins. Also I would cut the cayenne in half.. too spicy for a stew recipe. We added bay leaves at the end. A great recipe overall!!

  53. Kaylaakosua
    Kaylaakosua says:

Made this tonight. Great basic recipe. Needed a few tweaks. I brown the meat first and cooked it in brothe with fresh garlic. I didnt use celery but corn instead and used beef broth for flavour. Next time i will coat the beef in flour before browning and use 2.5 cups instead of 4. It was a soup more than a stew. Also add a bit of corn startch when adding the veggies. There is tons of waiting time aswell. I would add an addiotnal 30 minutes to this.

  54. Bears51

I have not even ate yet. BECAUSE I AM STILL WAITING FOR THE INSTAPOT TO BUILD STEAM! I am so hungry. My family is hungry. If there is one thing that drives me insane about this recipie is it never takes into account the build up time for pressure. Yes, im an idiot that still has not learned but come on! This beef stew takes an hour to cook plus an hour to build pressure and decompress. And there is no spell check on this program for reviewx. This stew better blow my mind!

  59. Essy1957
    Essy1957 says:

Simply delicious. I tossed the beef in a flour, paprika, pepper mix before sauteing. I also used beef broth instead of water. One must consider build up times to know exactly how ling to cook
    Besides that, this is perfection.

  60. clarkkentguy
    clarkkentguy says:

It takes at least a half hour to prepare the vegetables. If you add up all the times listed, it even adds up to more time than the total time it says in the recipe. Furthermore as another reviewer mentioned this doesn’t take into account the time to build up steam.
Basically, it just totally underestimates the time to complete this from start to finish.

I was super happy with how this turned out. Insted of beans i used peas, i also used beef broth in place of the water. It did turn out fairly soupy but was still delicious! I also added in 3 cloves of garlic. This was my first recipe made in my instapot. It fed my family of 6 with second helpings. It does take longer then it says it should because it doesnt take into account the time it takes to pressurize. Aweseome flavor for sure!

  63. Libra
    Libra says:

Instead of using packaged seasonings I cook the onion with the meat and add a bullion cube. I remove the stew after it’s done and thicken the gravy by stirring in 3 tbs of flour mixed into 1/4 cup of water ( bring to a boil & cook, stirring, for 3-5 minutes). Then, if it’s handy, I add 1 – 2 tsp of Kitchen Bouquet & return the stew to the pot.

    Elaine Bevington says:

I really enjoyed this recipe. It tasted great and was very easy to make. I am on a low-salt diet and did not have any beef broth on hand (which most other recipes call for) so was really glad the liquid used was water. For seasonings I used garlic, thyme, onion powder, oregano, bay leaves and rosemary. Also have to watch my potassium intake so increased carrots to 3 cups instead of using potatoes. Will definitely check out your other recipes.

This recipe is the best ever! I used 1 cup of red wine with 3 cups of water. I also dredged the stew meat in flour and gave it a quick browning, but be sure to clean the pot or you’ll get a ‘Burn’ message (like I did!). Definitely worth the dredging! It thickened up the gravy perfectly. My husband fell in love with this beef stew!

Hi, I read all these reviews, used the base recipe then did my own thing. I took the best out of the reviews. Below are my changes- but realize everyone has to do what THEY prefer and resonates with them.
    1pd meat vs 2
Sauted meat first, then put in instapot
3 water, 1 red wine (cups)*beef broth vs water could be good too.
Added garlic (2 cloves), 1 parsnip, 2 tbs corn starch, subbed peas for beans, some mushrooms as a throw in-all the rest was the same.
    thanks for sharing- quite yummy!

This was my first IP Recipe. Based on reviews, i made the following modifications: dredged meat in flour and sauteed before adding liquid. Changed water to two cups beef broth and two cups V8. Used one pack of stew seasoning. Cooked meat for 35 minutes and veggies for 6. Combined flour and water and added at end to thicken to taste. Everyone loved it! Will make it again. Took about two hours from start to finish.

Aside from needing to lower the cooking time to about 35min instead of 45, turned out not too bad.
Followed the instructions and everything was JUST overcooked.
Potatoes, carrots, and all kept their shape when scooped out but it was almost like eating pablum.
If you like your beef stew to just melt in your mouth with no need to chew, the recipe should be fine as it sits but I like my stew to have some solid substance.

Easy to make. We thought it needed salt after trying it but otherwise perfect. Next time i will add salt when cooking. 3-4 tsp

This was my first attempt for my first IP. 45 min was too long for the meat, it came out a little dry but was still tender. I used 5 cups (of beef broth) instead of 4 by accident, although the soup spurted out of the vent, I think 4 cups would have been too little. (I have a 6 qt maybe this recipe is for a larger size). Substituted mushrooms for peas. I did large chunks for the veggies and they came out perfect, the overall flavor was delicious. Would make again after adjustments.

Excellent! Made my own seasoning and thickened at the end with arrowroot instead of flour. Cooked for 30 minutes and beef was so tender! Used celery, carrots, mushrooms and onions and garlic.

Follow Recipe exact turned out great forgot to put onion in my family wasn’t sad. Oh I did throw in one beef bouillon cube with the 4 cups of water to cook the meat in.

Worked out great, with just a few modifications. I swapped out the water for 3 cups of beef stock, and 1 cup of dry red wine. Also, i used 3 packs of the beef stew mix, but added fresh fround pepper, kosher salt, chilli powder, white pepper, oregano & parsley.

Could have done the 1st step in 35 minutes, as the meat fell apart like pot roast. Still great, though!

    Thanks for the instructions!!

Will definitely make this again. I used 3 cups of water but will cut that a bit further back next time. I cooked the meat for 30 and the veggies for 7. Next time i will add worstershire sauce and maybe some canned tomato. Thickened “broth” with arrowroot and water.

I sauteed the meat with an onion. I added a crockery gourmet Seasoning packet and cooked the meat for 30 minutes. It was delicious and tender. I then added my veggies, including little potatoes. Cooked the vegies for 15 minutes. Its delicious. I used inexpensive stew Beef and was very please that it tasted so good

I would add in some Worcestershire and some tomatoes — it’s a little on the basic side without, and needs a bit of acid to counter it. Red wine vinegar might also be a good addition! Otherwise, delicious!

We used beef broth consumme as a portion of the liquid, included and onion while cooking the meet, added a bag of frozen veggies and quarterex potatoes. Second pressurized. Second pressurized cooking shouldn’t be more than 8 minutes (potatoes cooked too much). Excellent reaults!

Super easy and wonderful flavor. Each time we us a slightky different mix of spices. So far, whole grain mustard, apple cider vinegar, dark brown sugar and a little DescriptionWorcestershire has been the best.

This was delicious! I chopped up a 2 pound slab of round steak and it came out great! I suggest going easier on the potatoes on heavier on carrots and celery. I used 2 russett potatoes and 3 carrots. Thanks for the recipe!

This was easy to make. I traded 1 cup water for a 10 oz can of beef consomme and 1/2 cup water for 1/2 cup red wine.
Used more carrots and less potatoes.
I sauted the onion, garlic and beef for about 5 mins. In the IP.
I then added the liquids in step 1-2 and followed the recipe.
    Turned out better than expected.
