  • 1 lb ground beef preferably 93% lean
  • 6 slices bacon chopped into 1 inch pieces
  • 1 small onion finely diced
  • 1/2 cup beef broth
  • 1/4 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tbsp yellow mustard
  • 2 tbsp cold water
  • 2 tbsp cornstarch
  • 1 1/2 cup shredded cheddar
  • 6 toasted brioche hamburger buns

Instructions
  1. Add ground beef to the Instant Pot. Using the display panel select the SAUTE function and adjust to MORE or HIGH.
  2. Brown the meat until no pink remains. Drain fat. Transfer browned meat to a shallow dish and cover loosely with foil.
  3. Add bacon to the pot and cook until crisp. Remove bacon with a slotted spoon and set aside on a paper towel-lined plate.
  4. Add onion to the bacon drippings and saute until soft, about 3 minutes.
  5. Add broth to the pot and deglaze by using a wooden spoon to scrape the brown bits from the bottom of the pot.
  6. Put the ground beef back into to the pot and add the ketchup, worcestershire and mustard.
  7. Turn the pot off by selecting CANCEL, then secure the lid, making sure the vent is closed.
  8. Using the display panel select the MANUAL or PRESSURE COOK function*. Use the +/- keys and program the Instant Pot for 5 minutes.
  9. When the time is up, quick-release the pressure.
  10. In a small bowl, mix together cornstarch and cold water. Stir into the pot until thickened, returning to SAUTE mode as needed.
  11. Stir in bacon and cheese. Serve hot on toasted brioche buns.

*The MANUAL and PRESSURE COOK buttons are interchangeable.

    Made this a few nights ago for a quick and easy meal. Everyone loved it! These were so much better than any other sloppy joe recipe we have tried. I love that I can modify the ingredients to accommodate dietry needs. Plus, the leftovers were amazing the next day. Will definately be using this again!

    Super easy to make, my 11 year old son helped me make it. It did seem to miss something so I added fresh tomatoes and some French fried onions to my sandwich and that did the trick. You could also add mayonnaise if you want or pickles. Play with the toppings.

    Use grass fed beef and bacon from you favorite health food store. It really makes a difference in the flavor. 10 year old loved it and she hates sloppy joes.

    Love this recipe! I added a little bit of extra cheese to mine just to give it more of a taste. Also the thicker the bacon the better!

    We liked them just not used to all the salt from bacon. We added pickles, toms, and lettuce.. Yummy.

    Super easy, kids loved it. That in and of itself says it all (I have one super picky eater). I served them on Hawaiian Rolls instead of Brioche buns and they were a still a big hit.
