Ingredients
Mashed Potatoes:
  • 3 lbs yellow potatoes skin on, quartered
  • 1 cup chicken broth
  • 1 bay leaf
Meatloaf Mixture:
  • 1 1/2 lbs ground beef preferably 93% or leaner
  • 1 cup breadcrumbs
  • 2 eggs beaten
  • 2 tbsp parsley finely chopped (or 2 tsp dried)
  • 2 tsp each garlic powder onion powder
  • 1 tsp each kosher salt pepper
  • 1/2 cup honey bbq sauce
  • 4 pieces bacon cooked and crumbled
To Finish:
  • 1/4 cup honey bbq sauce
  • 1 cup half and half
  • 4 tbsp butter
  • 3/4 cup sour cream
  • 1 tsp garlic powder
  • Kosher salt and pepper to taste
  • Additional cooked and crumbled bacon for garnish

  • 1 tsp each kosher salt pepper
  • 1/2 cup honey bbq sauce
  • 4 pieces bacon cooked and crumbled
To Finish:

  • 1 cup half and half
  • 4 tbsp butter
  • 3/4 cup sour cream
  • 1 tsp garlic powder
  • Kosher salt and pepper to taste
  • Additional cooked and crumbled bacon for garnish

Instructions
  1. Place potatoes in the bottom of the pot in an even layer. Add the bay leaf and chicken broth. Place the steam rack on top of the potatoes.
  2. In a large bowl thoroughly combine the Meatloaf Mixture ingredients.
  3. Gently press the meatloaf into a 6-cup bundt pan and cover loosely with foil--do not seal.
  4. Use a foil sling to lower the bundt pan on to the steam rack, then secure the lid, making sure the vent is closed.
  5. Using the display panel select the MANUAL or PRESSURE COOK function*. Use the +/- keys and program the Instant Pot for 22 minutes.
  6. When the time is up, quick-release the remaining pressure. Remove the bundt pan and brush the top with 1/4 cup bbq sauce, then set under broiler for 5-7 minutes until sauce is bubbly and caramelized.
  7. Meanwhile, remove bay leaf and add half-and-half, butter, garlic powder and salt and pepper to the pot. Mash to your desired texture.
  8. Slice the meatloaf, top with additional crumbled bacon. Serve with the potatoes.
Recipe Notes

The MANUAL and PRESSURE COOK buttons are interchangeable.

    This was amazing! Only had one lb of ground beef so i adjusted the ingredients. Added 1/4 cup chopped onion to meat. Dudnt have sour cream fir mashed potatoes but added 1/2 cup parmesan. Will make this again!

    It was just ok for me. I might try it again but I’ll peel the potatoes next time. I didn’t care for the peels in the mashed potatoes. I felt the meatloaf was a little salty and didn’t care for the BBQ sauce. I’ll use real onions and catsup.

    Not really a review; will leave one when cooked, but what if im using ground turkey?? My family has a beef sensitivity, but i still wanna try this recipe

    When substituting ingredients, use our cooking time table to ensure the cooking time is correct.

    If the cooking time for the recipe is longer than the cooking time for substituted ingredients then no adjustments are needed.

    If the substituted ingredient requires a longer cooking time for the recipe than you will need to adjust the cooking time.

    I dont have a bundt pan small enough to put in instant pot, can I just use a stainless steel bowl.

    Hi Pdall,

    Anything that is oven-safe can be used in the Instant Pot Pressure Cooker. Remember to place the bowl on the steam rack and not directly into the Instant Pot.

    This was super easy to make and so delicious. My potatoes were a little thin so next time I’ll add 3/4 cup of half and half instead of 1 cup. Great flavors and easy clean up is what we like in my household!

    Loved this. First recipe I made with pot. It needed more liquid as it notified me with Burn. But pot cleaned up easy. I didn’t have a small enough bundt pan so I lined a small cheesecake pan with a shit glass in the middle. Bacon added was great!
