  • 1/4 cup heavy cream
  • 1/2 tsp salt

  • 4 strips bacon cooked and crumbled

Instructions
  1. Add all ingredients except the bacon to a blender. Blend until smooth (about 15 seconds).
  2. Coat the inside of silicone egg mold with nonstick spray.
  3. Evenly distribute the bacon into the egg molds. Pour egg mixture evenly over bacon and cover loosely with foil.
  4. Pour one cup of water in the Instant Pot and insert the steam rack.
  5. Carefully lower the egg mold onto the steam rack, then secure the lid, making sure the vent is closed.
  6. Using the display panel select the MANUAL or PRESSURE COOK function*. Use the +/- keys and program the Instant Pot for 10 minutes.
  7. When the time is up, quick-release the pressure. Remove the egg mold and let cool for 2-3 minutes.
  8. Unmold the egg bites and enjoy immediately or refrigerate up to one week.

    These came out better than I thought they would! I used mostly a parm,mozzarella, asiago mix and a bit of mixed cheddar. Plus I added diced tomatoes. I have the 7 egg mold so I reset the servings for 7, wanted to make sure I’d have enough mixture. I definitely did with all the bacon and tomatoes inside so I was able to make a second set. The adjusted measurements totally worked. SOOOO good!

    I changed the recipe to “Ham, Gouda, and Spinach Egg Bites”. Delicious. Although I increased the servings to 7, since my mold has 7 spaces, but I ended up with a lot more than I expected; 14 egg bites and an omelet. I sauteed the spinach and ham in 1T butter while mixing other ingredients, then added last in the mold. Maybe the butter is the reason they came out of the mold so easily, even without nonstick spray. Dont fill mold cavities all the way up, they will grow a little.

    So delicious and easy to make! Definitely let it sit for a few minutes after its out of the pot – otherwise it doesn’t hold form very well 🙂

    Yummy! And lots of protein with these ingredients. Will make again. Easy to adjust depending on stuff in my fridge.

    Easy and delicuous! I would suggest you use half of the salt in the recipe or a lower sodium brand of bacon.

    Really easy to make and a great go to on a busy morning. Love switching our cheeses, adding ham or sausage and fresh herbs. If you’re onion lovers like us chopped green or spanish onion is great too!
